00:00Approximately 15% of all food listings on apps such as Deliveroo and Uber Eats are now dark kitchens,
00:06meaning that if you went to the address listed on the app, you wouldn't find a restaurant with tables and waiters.
00:11You're more likely to find them in a metal shipping container.
00:14One industrial kitchen can legally trade as 10 different restaurants on the app.
00:18So when you see Jake's, Vegan Shack, Wings of Fire and the Burger Bros, they are possibly all being cooked by the same person.
00:24Why? Because it hacks the algorithm. If they list one restaurant, they get one spot on the search page.
00:29If they list as 10 virtual brands, they dominate the entire screen.
00:33It makes sense for the dark kitchen. You don't need a high street restaurant location or a load of waiters.
00:38So you're saving on both rent and wages.
