02:26Mark launched his restaurant three years ago,

02:31This, to me, this is the dream for moving to Spain.

02:36Mark is always looking for new ways
02:38to keep growing the business.
02:40Today we're running our first cookery class in Spain.
02:42I used to do them in the UK many years ago.

02:48They've invited eight eager students along
02:51for a free cookery class trial.

05:21As well as the kennels, there's a litter of recently rescued pups
05:24being looked after at one of the volunteers' homes.
05:28Two nights ago now, I got a phone call in the middle of a storm.
05:32Somebody had just thrown seven, must have been eight-day-old puppies
05:37into the campo in all that weather.
05:39So I went and met them, brought them home.
05:41It was such a shock, I think, with all the noise and the rain and being wet and everything.
05:46The puppies have been getting round-the-clock care as a volunteer's home, and Susie's desperate
05:50to find out how they're doing.
05:52As soon as we finish here, I'm going to drive to Adrian's because she took them over from
05:56me.
05:57So they've gone there.
05:58That's my afternoon.
05:59But first, there's a woofing busy work day to walk us through.
06:05Yay!
06:06And that weather is a worry as well.
06:09Normally, the dogs wouldn't be in the pen when we were playing.
06:13But because of the rain, I can't put them outside.
06:16It would be too wet for them.
06:19In recent years, the Costas has experienced a range of extreme weather.
06:25We've had a drought all this year.
06:28We've had no rain.
06:30And the temperatures have been really high as well.
06:33Yay!
06:34That was good.
06:36But I think we had something like a month's worth of rain in eight hours the other day.
06:42And that's caused a lot of problems.
06:44Normally, it's hot.
06:46We're normally complaining of the heat.
06:48Normally, we're drinking gallons of water.
06:50Today, we're scooping it up.
06:52We've had our roads swept away before with the mountain of rain up there.
06:57In fact, about six, seven years ago, the road all of a sudden went crushing down the mountain.
07:02We all thought we were going to die.
07:04It really was horrendous.
07:06So we have 17 different pens.
07:09This is the one that's on the mountainside where all the mud and the soil's coming through.
07:13All of these ones have been cleaned already.
07:15But you can still see it's coming in all the time.
07:22And it's showing no signs of stopping.
07:26The rain at the moment is how I always call it tropical.
07:32I think inside when they're cleaning, as quick as they're clearing it up, it's coming back in again.
07:38But as long as all the mud and the soil stays where it is, we'll be okay.
07:43Susie's day could become a total washout.
07:46And she still needs to go check on the rescued pups.

08:42Aspiring photographer Simon and his wife Becky are launching a new business.
08:46All the time I come along, especially when it's kids, I can make myself look silly.

09:00The good thing about the photography is if I can get 10, 15, 20 weddings a year,
09:05that is a good bit of pocket money for us as a family.
09:10And we're digging out Becky and Simon's family album to a hectic snapshot of life back in a busy 2020.

09:18I think we're here celebrating Danielle's birthday and just celebrating life in general.
09:24Becky performs as a singer, while Simon also graphs as a removals driver.
09:29But it's always a seven day week for us.
09:32And Becky's also a full time hairdresser.
09:34I started at 16, got my own salon at 21, and I'm now 31.
09:43Between us, we've got four jobs.
09:45You know, I've got two jobs, you've got two jobs.
09:48Are we rolling in money?
09:50No way.
09:51And there is one driving force behind all this toil.

09:56Their son, Huntley.
09:58His second birthday is coming up, and I think, do you just want to create just the best day?
10:04And I will, and I will go above and beyond and call it spoil or not,
10:08because he's just, he's amazing and deserves it.
10:10And there's an extra reason why Huntley's so special.
10:14We were told that we'd never, ever have children.
10:18And we actually, just before we was going to go through treatment,
10:23we actually went to the hospital to start with bloods and tests
10:28to see what the next stage was.
10:30And they were like, no, you're nine and a half weeks pregnant.
10:35So they called him the miracle baby.
10:37Whee!
10:40He's always been extra special to us because we just thought it would never happen.
10:45So Becky's sparing no expense.
10:48She's hoping to throw Huntley the birthday bash to end all birthday bashes.
10:53We had a budget of 600.
10:57We've gone over that budget.
11:00We just put in more hours at work to get that little bit of extra.

11:15In Oriwella, the countdown is on to Mark's taster cookery class.
11:20So we're going to be making some Spanish meatballs today,
11:24locally known as albondigas in a tomato sauce.
11:27We're going to be doing a Russian salad.
11:29We're going to be doing some Thai spring rolls with sweet chilling dip.
11:32Ooh, you had me at meatballs, Mark.
11:34Hopefully we've got two hours to teach eight students how to make them all from scratch,
11:39from start to finish.
11:40Could be fun.
11:42It certainly could, but there's a lot riding on today.
11:45It's our first one.
11:47Looking forward to it.
11:49With the help of friend and fellow chef Terry, Mark is hoping to launch regular cookery classes
11:54to increase the restaurant's income.
11:57We've got half an hour to go and we've got a lot of prep still to do.
12:00Regular paid classes could earn them a few extra grand a year,
12:04but only if they can get the bookings.
12:07We're not making any money from today's class.
12:09Today's class has purely been funded by myself and Terry.

13:35Mark's new cookery school could be given the shop before it's even begun.
13:41I surprised my daughter.
13:51Woke up one morning and I said, right, let's pack our bags.
13:54We're going on holiday.
13:55It's a lovely photo to start off with, but it's also, it was nice and memory of my daughter
14:04and I going away.
14:09And, uh, it was a great surprise and it was just wonderful to see her face and, because
14:16she was always saying, we never go on holiday, everybody else goes but us.
14:22And she deserved it because she is just absolutely amazing daughter.
14:35All this water flooding through is what's coming from our roof.
14:43Up in the hills near Estepona, it's an uphill battle for Susie and the gang.
14:49They're trying to keep the rescue pooch's pens free from flood and mud.
14:54And because it's been so dry for the rest of the year, it's loose.
14:57It's loose soil, it's loose mud.
14:59Susie's desperate to go check on the puppies that were rescued just two days ago.
15:03Not so much mud.
15:09But her first priority is making sure the shelter's not at risk.
15:13We've done everything we can in the past.
15:15We've built up walls, we've built up barriers, we've put good drainage in.
15:19We could evacuate the dogs if need be because we have a really good evacuation plan.
15:24But, you know, you just don't want to.
15:29But there was no choice but to evacuate when four years ago, Susie's shelter was struck by another devastating disaster.
15:38It was the second biggest fire in the history of Andalusia.
15:42It had been going on for about a week before it actually came down to us.
15:47You could hear the trees popping and crackling right on the top of the mountain.
15:52But the wind was blowing it in the other direction away from us.
15:56And then one Sunday morning, twenty past nine, we get the call.
16:00The wind's changed, it's coming down the hill.
16:03Literally, I think it was ten minutes before the fire came through, we got the last two dogs out.
16:10And we were closed down.
16:12And it roared through.
16:14And it took everything away from us, apart from the main building, we lost everything.
16:19The main building, when we were let back into it, was charged so badly.
16:24But that was it, and we were so grateful.
16:26If you looked at it, it had a ring completely around the building like that, where everything came to a standstill.
16:33Magic.
16:35Somebody was looking after us.
16:37Definitely, somebody was definitely looking after us that day.
16:41It's taken the team a lot of hard work, dedication and money to get the shelter back up and running.
16:50We are prepared for nearly everything, apart from locusts.

16:57Today, the priority is making sure the dogs are safe.
17:01Then Susie needs to go and check on those newborn pups.
17:06It really is a lot of worry, and it is a lot of stress.
17:09And I'm really only twenty-three, I just look like seventy-five.
17:14I have so many things juggling going around in my head, because these dogs' lives depend on us.
17:21And with so much at stake, there's no room for slip-ups.

24:04Now a traditional tapas dish, it's thought albondigas were brought to Spain from Africa during the Middle Ages.

24:14The meatballs are mixed by hand to make sure the ingredients are all even.
24:18It is quite therapeutic, you know, just getting your hands dirty.
24:23But if they're overworked, the balls could end up too firm.
24:29Now you should all end up with something along this size.

24:35From this, we're going to make 16 meatballs.
24:39They need to be approximately walnut size.
24:42I think they're perfect.

24:55Ideally, the balls need to be cooked all the way through without being overdone on the outside.

41:29Foster mum Adrian is now giving them round-the-clock care,
41:33which means feeding them six times a day.
41:36I'm mixing up the puppy milk.
41:38It's the special milk that we get for them.
41:42So, it has to be a certain temperature,
41:45and it has to be well-mixed.
41:48Mix it with some tin food.
41:51This is also a special puppy milk.
41:53Drobs up.
41:54Ooh, I think they're hungry.
41:55Listen to the attitude.
41:57When I get them like this,
41:59I mean, the main thing is to make sure that they're all healthy,
42:02they're all eating properly,
42:04they're getting fed every four hours.
42:07You have to hurry up, as you may say.
42:11It's having an old mood with itself, look.
42:14Hand-feeding newborn puppies is very, very stressful,
42:19because literally, their lives depend on whoever's looking after them.
42:23And you haven't got any teeth, have you?
42:25In a few more weeks, the puppies should be ready to be rehomed.
42:29And for Susie, that makes all the hard work and long hours worthwhile.
42:34We've done everything we can to try and save them.
42:37So, when you get them like this,
42:39and they're eating, and they want to eat, and they're active,
