00:17:21matias matias is studied with some of the finest chefs in all of europe but now he gets to learn from
00:17:39the best it's the real nice to meet you all um officially hi so we will be making delicious dishes
00:17:55for the summer leading all the way up to la noche de san juan this is a celebration of the summer solstice
00:18:02the longest day of the year this is when um friends and loved ones they gather on the beaches of spain
00:18:08with big fires to welcome the arrival of summer that's lovely oh jenks and uh today we will start
00:18:20with one of the most popular dishes in spain the tortilla espanola what you call the spanish omelet
00:18:27oh hey thank you so fun so fun oh yeah eggs cut your potatoes into quarters and then you slice them
00:18:39into little triangles okay watch your fingers honey you watch yourself while i'm holding this knife mom
00:18:51oh they should be about this thick for the best taste how sophia doing yeah those look um pretty good
00:19:01actually lucky you do not need to use your foot for this huh so cute
00:19:09and then you sprinkle a little truffle salt on your potatoes once they are cut
