00:04This soft Italian cheese is handy for adding creaminess to both desserts and savory dishes.
00:10But mascarpone can be hard to find, and it can be pricey.
00:13Luckily, it's easy to make your own.
00:16All you need is heavy cream, nonfat milk powder, and lemon juice.
00:19First, whisk the heavy cream and milk powder together, then heat it to 180 degrees.
00:25Milk powder provides supplemental protein to keep the cheese thick and creamy.
00:29Bowl the cream between 180 and 190 degrees for 10 minutes.
00:34Then remove from the heat and stir in the lemon juice.
00:36You'll see the mixture start to thicken.
00:38That's because the high temperature denatures the milk proteins,
00:42then the acid in the lemon juice slowly causes them to coagulate.
00:46Pour the mixture into a heat-safe bowl and refrigerate for 2 hours until it's thick like yogurt.
00:51Then strain and refrigerate for 12 or up to 24 hours until it's thick and creamy.
00:57The resulting mascarpone is a bit richer than what you typically find in the store,
