01:10I have the opportunity of having both parents in the industry.
01:12Okay. Are they both chefs?
01:15Both of them were chefs.
01:15No matter what parent I was with, I was always in one of their restaurants.
01:18Yeah, in the kitchen.
01:20And I didn't love it at a young age.
01:23I saw how tired my parents were.
01:26I enrolled into culinary school.
01:28I lasted two months and I walked out.
01:30Because everything they were teaching was through a book and I'd already know it.

01:43It's been a constant movement from then on, learning from real professional chefs versus culinary school.
01:49And I'm not an advocate to tell people to do what I did.
01:53It's not an easy way to get through.
01:56But it's a very personal journey that I've enjoyed.

02:05We made this transition about a decade ago where I felt like it doesn't benefit the food, screaming or shouting.

02:23What if we could take out all of the talking and make sure everybody knows exactly what to do at exactly the right time
