00:00Here's what's happening on the ranch I'm sharing sensational sweets with no cooking required first a show-stopping whiskey peach icebox pie that's perfect for parties then a shortcut lemon pudding bowl that's elegant and easy there are incredible iced coffee popsicles for an anytime snack and bite-sized chocolate peanut butter dates doing double duty as an app or a sweet and sweet
00:30salty treat it's all about no cook sweets four ways raise your hand if you love dessert raising I'm going to raise both hands well I love dessert but I don't always want to turn on the oven and take the time to bake a cake or a pie so I love the whole category of no cook desserts and I thought I would share four of my current favorites and I'm going to start with a good one
00:59whiskey peach icebox pie icebox pie is such a wonderful category of dessert you don't have to worry about turning on the oven you just mix everything together assemble it and pop it in the fridge I love every single variation I've ever made so I started with some chopped up peaches and these are just frozen peaches that I allowed to thaw and I'm going to add some brown sugar
01:23sugar and a glug of whiskey this is not the last time I'm going to mention whiskey in this dessert I love whiskey mixed with peaches it's such a wonderful combination and then you just stir this around and the brown sugar is going to dissolve with that whiskey yum yum and yum so I'll let that sit and get even more miraculous
01:53so I'll let's just ground up ginger snaps and then some melted butter and then I've got more brown sugar I'll add it in and you just want to stir and gradually you'll see that melted butter moisten all the crumbs and you just keep stirring until they all look nice and moist and we are there so I will press these crumbs into this little tart pan and this is one of those tart pans that has the bottom that comes out
02:23and that's going to make it easy to lift the tart out later I love these so just dump all the crumbs into the pan just get it in there and press it and then once you kind of get it all covered evenly then just kind of go around the edge all right and when you've got them up the sides you really want to pack everything in just nice and firm I'll dust off my hands and then instead of putting this in
02:53in the oven as I would normally do I'm going to pop it in the freezer and that's really all you have to do to get the base ready to add the filling so I'll let that sit in there and while it firms up I'm going to make the cream cheese mixture which is another component of the icebox pie so I've got softened cream cheese
03:13and I'm going to add some peach preserves I love this particular peach preserves because it's got great color and little chunks of peaches in there and what I like to call the nectar of the south
03:29some sweetened condensed milk
03:32so I'm going to whip this cream cheese mixture
03:37I'll start slow because this is kind of sticky and messy
03:41you don't want this winding up on the ceiling
03:43I'm going to beat this until the mixture is totally smooth and you can't see any more of the lumps of cream cheese
03:51and then I'm going to fold in this whiskey whipped cream
03:55oh my gosh that's my favorite part I think
03:57let me tell you how to make it it is super easy
04:01the whiskey cream makes all the difference
04:04I put two cups of heavy whipping cream in a bowl
04:07added half a cup of powdered sugar
04:10a tablespoon of vanilla bean paste
04:13and whipped it with a hand mixer until stiff peaks formed
04:16then I poured in an ounce of whiskey
04:19and beat it until it was just incorporated
04:22told you it was easy
04:24so now that this delicious cream cheese mixture is totally smooth
04:30I'm going to fold in the whiskey whipped cream
04:33and I just kind of plop piles of it
04:37all across the surface of this cream cheese
04:42so when you fold you never want to stir stir stir
04:46because you'll break up all that light whipped cream
04:49so you just want to give it probably five or six big kind of swirls
04:57oh my gosh this is going to be so good
04:59so I'm going to grab that crust
05:01it's nice because it does not take very long at all to be ready
05:06it just kind of firms it up
05:08so here we go with this beautiful filling
05:13wow
05:14and then you can just kind of swirl and make whatever design you like
05:20but it should come up higher than the sides of the crust
05:25so that looks perfect
05:26and now for the peaches
05:28which have been swimming around in this whiskey and brown sugar
05:34just give it one final stir to make sure they're totally coated
05:37and then I'm going to swap a slotted spoon
05:41because I don't want to totally inundate this with the liquid
05:46I just want to get all the flavor of the liquid
05:48without all the soupiness
05:50and you just want to sprinkle these beautiful peaches all over
05:54you can take your time if you want it to look a little bit more organized
05:59and well thought out
06:01but you know how I love a rustic dessert
06:03so
06:03all right
06:05so now all you have to do is chill this until you're ready to serve it
06:10and one thing I forgot to share with you is that
06:14I went ahead and made extras today
06:18so I have one and I want to show you how to serve this
06:23it looks beautiful
06:24and it just gets better and better in the fridge
06:28I love that these are called icebox pies
06:32nobody calls fridges iceboxes anymore
06:36but my grandma used to call her fridge an icebox
06:39and I love vintage things
06:41so the whole category of icebox pie is wonderful
06:45so to serve it it's super easy
06:50and this is why it's nice to use these tart pans
06:53where the bottom comes out
06:55okay
06:56look at this
06:58oh my gosh
07:00it's really hard to believe that this did not involve an oven
07:06it kind of looks like
07:07some kind of beautiful custardy French creation
07:14I don't know
07:14it looks like it was a lot harder than it was
07:17is what I'm trying to say
07:18all right
07:19well this is the first of the no-cook sweets
07:22that I'm going to be sharing with you
07:23it's going to be hard to top this
07:25anytime you are in the mood for a dessert
07:28that's super easy
07:30give this one a try
07:32you will not regret it
07:33excuse me
07:36oh man
07:41ooh that whiskey
07:43that is good
07:44I love this next no-cook sweet
07:51because it involves a childhood favorite of mine
07:54pudding
07:55lemon pudding to be exact
07:57I am going to make a lemon pudding bowl
08:00that is so delightful and refreshing
08:03and it happens to be gorgeous
08:05so it's really great for entertaining
08:08the pudding bowl starts with these lemon dipped cookies
08:11they're kind of regular cookie on one side
08:15and then they have this lemon coating on the underside
08:17and I'm lining the bottom of this trifle bowl
08:22and I'm going to make a little bit of a circle
08:27around the sides
08:29and then that's what you're going to see on the side of this beautiful pudding bowl
08:34this is such a cool dessert
08:36and it uses a couple of shortcuts
08:38which makes it even more of a favorite
08:42all right
08:44we'll just let that wait
08:45and I'm going to make the filling for this pudding bowl
08:48I'm going to start with a lemony whipped cream
08:51I've got heavy cream in this bowl
08:53and I'll add some powdered sugar
08:54and my favorite form of vanilla
08:58vanilla bean paste
08:59I just love the little flecks of caviar that you get
09:03it's so delicious
09:04I've been using it all the time
09:06instead of vanilla extract
09:07I've got some lemon zest
09:09and I'm going to get all that in there
09:11and I'm going to use jarred lemon curd
09:15just for a little extra pop of lemon
09:18it is such a great shortcut
09:19and it just kind of makes the texture
09:22of this lemony whipped cream so nice
09:25a couple of spoonfuls of that
09:28and then lemon juice
09:30and I just want to add about two tablespoons
09:33one, two
09:36if you add too much
09:38the whipped cream won't whip as well
09:40all right
09:41so now I'm going to grab the mixer
09:43okay, I'm just going to whip this together
09:46and then I'll make the pudding mix
09:48it doesn't take too long to whip the lemon cream
09:51and when it's light and holding its shape
09:54it's done
09:54then for the pudding mix
09:57I'll pour two cups of whole milk into a second bowl
10:00add a three and a half ounce pouch of cheesecake instant pudding mix
10:05the zest and the juice of a lemon
10:07and whisk it until it's thick
10:09all right, this pudding is almost done
10:13I just need to fold in some lemon curd
10:17so there's lemon curd in the whipped cream
10:19and also in the pudding
10:21I'm going to be a little more generous with the pudding
10:24lemon curd always makes my mouth water
10:28when I see a jar of it
10:29it is so tart
10:31so just fold this together
10:34I usually make pudding on the stove top
10:37and it takes a little bit of time
10:39it's still really easy
10:41but this is such a great way to get pudding super fast
10:45you just have to stir it with milk
10:47and you don't even have to turn on the stove
10:50so it's perfect for no-cooked sweets
10:52okay, now that the lemon curd is mixed in with the pudding
10:56I'm going to assemble this pudding bowl
10:59I'm going to basically pour this lemon mixture
11:03into the bottom of this trifle bowl
11:06I don't want to get on the other side of those upright cookies
11:10so it takes a little bit of a steady hand
11:13oh my gosh, how pretty
11:14and then comes the lemony whipped cream
11:19I'll use the same spoon
11:20because it's basically all lemony
11:23and I'm going to carefully pile this on
11:27right on top
11:30okay, and you'll wind up with a beautiful mound
11:34of the lemony whipped cream
11:35and I like to decorate the top of this
11:39I took one of those lemon cookies and crushed it
11:42and I'll just sprinkle crumbs all over
11:46I don't want to totally cover the whipped cream
11:48so I'll go kind of light
11:49and some blueberries
11:53which is always a nice thing to add to anything lemony
11:57and then two or three lemon wedges
12:01and what a gorgeous, gorgeous dessert
12:06so as was the case with the icebox pie
12:10this needs to go into the fridge for about four hours
12:13and as I mentioned
12:17have a swap
12:18ooh, isn't that gorgeous
12:21now this is one of those desserts
12:22that's almost too pretty to spoon into
12:26but almost is the operative word
12:29I'm just going to go in, you guys
12:31I want to show you how yummy this is
12:34and those cookies really soften in the fridge
12:38I kind of hate to get in there and mess everything up
12:42but that's actually the beauty of a pudding bowl like this
12:46oh my gosh
12:47wow
12:48well, lemon pudding bowl, guys
12:51perfect for entertaining
12:54perfect for potlucks
12:55perfect for pretty much anything
12:59hmm
13:03I think this is a serving spoon
13:06feels right
13:09I absolutely love coffee desserts
13:16it is 100% my favorite category of sweets
13:20anything with a coffee flavor
13:22I am madly in love with
13:24so I am going to show you how to make
13:26the creamiest, dreamiest
13:29most coffee forward
13:31iced coffee pops
13:32they are so great to have in the freezer
13:35they're so refreshing and cool
13:37and just amazing
13:39if you love coffee flavor
13:41so I'm making the mixture for the pops
13:43I started with a tablespoon
13:45of really good instant coffee
13:47it's really fine ground
13:49so it'll mix in with all the other ingredients
13:52I added heavy cream
13:53and half and half
13:54and I'm going to add
13:56some sweetened condensed milk
13:58here we go
13:59oh my gosh
14:01and then
14:03a little bit of vanilla bean paste
14:06just about half a tablespoon or so
14:08okay
14:09and then I'm going to use
14:11an immersion blender
14:12to mix all this together
14:14and you're going to watch
14:16the color of this turn
14:18to just a beautiful
14:19kind of cafe au lait color
14:20alright, here we go
14:22oh my gosh
14:25delicious
14:27alright
14:29it's as easy as that
14:32to mix it together
14:33so then you need some little molds
14:36for iced pops
14:37I love having these on hand
14:39and then you just
14:40pour the mixture
14:42whoop
14:42until it's not quite to the top
14:45because you want to leave
14:46a little room for it to expand
14:47while it freezes
14:48so while I pour
14:50the rest of this
14:51into the molds
14:52let me show you
14:53some other no-cook coffee desserts
14:55that I've known
14:56and loved
14:56through the years
14:57these desserts
14:59are absolute winners
15:00first
15:01divine
15:02dulce de leche
15:03peau de creme
15:04they are super fancy
15:05and very easy
15:06you add chocolate
15:08eggs
15:08rum
15:09salt
15:10and vanilla bean paste
15:12to a blender
15:12and pour in hot coffee
15:14just blend it together
15:16then pour the chocolatey custard
15:18into jars
15:19over some dulce de leche
15:20chill them
15:22and top them
15:23with coconut whipped cream
15:24and toasted coconut flakes
15:26and there you have it
15:27incredible
15:28elegant
15:29sinful
15:30and delicious desserts
15:31then I have to tell you
15:33about shortcut
15:34frozen tiramisu cake
15:35it's got layers
15:37of sliced pound cake
15:38coffee liqueur
15:39coffee ice cream
15:41which I adore
15:42and grated bittersweet chocolate
15:44mixed with ground espresso beans
15:46then there are more layers
15:48of cake
15:48liqueur
15:49chocolate
15:50coffee
15:51and vanilla ice cream
15:52and the chocolate coffee bean sprinkle
15:55finally you just freeze it
15:57serve it
15:58and wait for gasps
15:59of admiration
16:00yeah
16:02coffee desserts and I
16:03we go way back
16:04okay
16:06and then I'll just put
16:08these little lids on
16:09they have the stick
16:10and the handle
16:11all together
16:12all right
16:15so these
16:15go into the freezer
16:16of course
16:17because they're freezer pops
16:18and it'll probably take
16:20four to six hours
16:21for them to
16:22really set
16:23so these are ready
16:27I just love this
16:28it's nice to have
16:30two sets of everything
16:31all right
16:32these should be
16:33perfect
16:34and ready
16:34then you just take off
16:36the cover
16:36honestly I love
16:40making these
16:41at the beginning
16:41of the week
16:42and they make such
16:43a perfect little
16:44afternoon snack
16:45throughout the week
16:46all right
16:47in terms of
16:48coffee treats
16:49especially no
16:51cooked coffee treats
16:52this has got to be
16:53top three for me
16:54hmm
16:58oh
16:59definitely top two
17:01this may be the top
17:04I can't believe
17:09I'm on my final
17:10no cook sweet
17:11to share with you
17:12it involves
17:13these dates
17:14and trust me
17:15you're going to
17:16want to make these
17:17you will never look
17:17at dates the same
17:18way again
17:19so while I get
17:20the dates ready
17:21let me tell you
17:22about some other
17:23no cook sweet
17:24tiny bites
17:25that I've made
17:26through the years
17:27I love every
17:28single one of them
17:29these are delicious
17:30little gems
17:31first easy
17:32and elegant
17:33chocolate dipped
17:34strawberries
17:35you just dip them
17:36in melted
17:36semi-sweet chocolate
17:37let them set
17:39then drizzle over
17:40melted white chocolate
17:41to make them
17:42extra fancy
17:43then sticking with
17:45fruit
17:45I am in love
17:47with Prosecco grapes
17:48you just soak
17:49grapes in sparkling
17:50Prosecco for 24 hours
17:52then drain them
17:53pour over sugar
17:55mixed with lime zest
17:56shake them to make
17:57sure they're
17:58completely coated
17:58and freeze them
18:00they're great to have
18:01after dinner
18:02when you're
18:02entertaining
18:03or just for an
18:04anytime treat
18:05the final suggestion
18:06is shortcut
18:07caramel nut truffles
18:09just pour chopped
18:11salted roasted nuts
18:12into a bowl
18:13with sugar
18:14lemon zest
18:15and cayenne
18:16then mix
18:17everything together
18:18then roll
18:19soft caramels
18:20in your hands
18:21and toss them
18:22in the nuts
18:22to coat them
18:23totally easy
18:24and totally divine
18:25oh my gosh
18:28such sweet memories
18:29I love every single
18:30one of those
18:31little bites
18:31okay back to the dates
18:34you are definitely
18:35going to want to make
18:36these
18:36I'm making chocolate
18:38peanut butter dates
18:39and when it's all
18:40said and done
18:41one of these little bites
18:42is going to taste
18:43like a candy bar
18:44they are incredible
18:46and so easy to make
18:47if you don't make
18:48a lot of things
18:49with dates
18:49this is going to be
18:51like the gateway
18:52into that
18:52all right
18:53I have pitted dates
18:54and I just kind of
18:55made a slit
18:56and opened them up
18:57and I have some
18:58crunchy peanut butter
18:59and I'll just show you
19:01how to make
19:01one of these real quick
19:03so smear the peanut butter
19:06into the date
19:07just kind of
19:08get as much in there
19:09as you can
19:10all right
19:11and this is just
19:13the first stage
19:14of building the dates
19:15so I've got one done
19:16and I'm going to do
19:17the same thing
19:17to the rest
19:18okay I got all the dates
19:24filled with the
19:25crunchy peanut butter
19:26and now I am going
19:28to drizzle some
19:29dark chocolate
19:30over each one
19:32and if you wanted to
19:34you could always
19:35dunk these individually
19:36to totally coat them
19:38but it's just as easy
19:40to kind of spoon
19:41the chocolate over
19:42if it doesn't fully
19:44cover the date
19:45that's fine
19:46all right
19:47I think
19:49they are sufficiently
19:50coated in chocolate
19:51and you can leave
19:53them as they are
19:54and let them set
19:55or I like to sprinkle
19:57on some finely chopped
19:59peanuts
20:00just all over the top
20:02and then after
20:03the peanuts are on there
20:05just get a little sea salt
20:06and you get that kind of
20:08salty sweet
20:10vibe
20:11I love the salt
20:13on these
20:13so nice
20:14and the peanut butter
20:15is salty
20:16I cannot think of one thing
20:19about these little bites
20:20that I don't
20:21absolutely adore
20:22okay
20:23now you just have to have
20:24a little patience
20:25because before you get
20:27to eat these
20:27you need to pop them
20:29into the freezer
20:30just to flash freeze them
20:32for about 15 minutes
20:33and that will allow
20:34the chocolate to harden
20:35after they flash freeze
20:38you can transfer them
20:39to the fridge
20:40and they can sit there
20:41until you're ready
20:42to serve them
20:43or eat them
20:44well that's the last
20:46of my no cook sweet treats
