00:00For the next three days, we're camping our remote part of Hawaii with crystal
00:05clear waters. We'll be exploring untouched zones, spearfishing for our food, and

01:36So we're going to suit up, jump in a water, catch some fish for dinner and then we're going to pack up camp after.
01:41First drop of the day and I'm lying on my back here down at 50 feet watching the Opelukala swim in.
01:57The water clarity today is beautiful, but there's not too much other action going on.
02:02And I love throwing these guys on the hibachi, so I spin around and pluck one.
02:06I got a nice shot on him with the CT9 and we whip up some pretty amazing meals with this guy.
02:14I throw him on my belt kui, pull him off my three prong and I get back down there because I'm hoping this
02:22ledge is holding some reds. Master chef Les wants to whip up some empachi sinigang for dinner tonight.
02:28One down and all I need is four more.
02:35The more I eat pachi, the more I realize how much I love the taste of this fish.
02:43The current is moving us really fast today and I found another ledge to try out.
02:47You can see the pachi is kind of sticking out at the edge there.
02:50I get down to the bottom and it's a nice little honey hole with some good sized ones.
02:55I got the one that I wanted, but something's telling me that something might want me.
03:02So I take a little peeky to my right and false alarm, no more sharks.
03:07So I get back to business.
03:08I take this pachi off and my oxygen levels are still pretty high.
03:12So I go for one more.
03:18I got the two for one pachi special and you cannot complain when you get deals like that.
03:23Right now I'm directly over the ledge and you can see how fast the current is moving.
03:27By the time I get the second pachi on, I'm about 15 feet away already.
03:32As I'm going to swing my ono grinds around my waist, I spot the thing that was watching me.
03:38And he looks hungry.
03:40Look at the size of that shark compared to the ledge.
03:43That ledge was pretty big when I was down there shooting them pachis.
03:46I don't want to mess with that guy.
03:48So I decide to swim in and find a different spot.
03:51Now I'm in the shallows about 30 feet.
03:53And I found another pachi hole.
03:55First, I make sure the coast is clear.
03:59So I put my focus back on these pachis.
04:02All I need is one more for the sinigang soup.
04:05But I'm pretty far from the pachi hole.
04:07My CT9 is 9 feet long, which is coming in pretty handy right here.
04:12I'm able to stay on this ledge and I can still pluck one from far away.
04:17I got the last one that I needed, but that was a pretty big shark.
04:21And I haven't forgotten about him.
04:23So I peek to my right, make sure he's not creeping up on me.
04:26I peek to my left and the coast looks clear.
04:29And we got winna winna menpachi dinner.
04:33I get my soup ingredients onto my belt kui.
04:37And then I spotted this tiny taco checking me out.
04:40I think he wanted a pachi, but I ain't got none to spare.
04:43It's so cool how they can camo into the reef like that.
04:46Speaking of reef, let's see what he's been up to.
04:51He's been working the shallows with papa togs, collecting a nice kui of fish to fry.
04:57He spots a nai nai deep inside the cave.
05:00There goes my taco friend.
05:13Nah, that's his big scary uncle.
05:15And he's going to turn into some taco popcorn.
05:18One more manini for the road and we are good to go.
05:36Got a couple paches and a nice kalah, but the kaili mai's gotta bounce.

08:05Somehow that poohee managed to get through all these little rocks and boulders.
08:23So, the beautiful thing about the Opelukala is that you can cook it just with the skin on.
08:49It kind of like steams itself.
08:54It's time for MasterChef Les to whip up some Mpachi sine kong.
09:03First, he's going to cut up some big chunks of onions.
09:05Slice some shallots.
09:07Fine tune some tomatoes.
09:09Gingerly slice the ginger.
09:11Smash and dash that garlic.
09:13Throw it all in a pot with water and boil it.
09:16It tastes like fish lobster.
09:36Woo!
09:38It's kind of got like a sour flavor to it with the perfect hint of salt.
10:02And that Mpachi is so butter, it just melts in your mouth.
10:13Oh, fresh and clean.
10:15Stuffed to the gills.
10:17And now it's Moy Moy time.
10:18Hopefully tomorrow we run into a nice big fat Uku on our drift.

11:11I take my first drop of the day and on my way down, I spot this big school of taape headed my way.
11:25I spin to my right and there's a nice little moo there and a little uhi.
11:31There's some really cool structure around and some big moo off into the distance,
11:35but not too much action next drop.
11:37I landed right on this little TB and all I can do is just throw him the shaka.
11:41No more nothing.
11:42So I spin around and I point at the opelukalas.
11:45I tell him, come bring your cousins the uku because I have a peace offering.
11:49I throw the peace offering in the air, but it doesn't seem like anyone's buying it.
11:53This little moo and opelukalas seem interested, but I'm looking for Mr. Uku.
11:59No more ukus to my right and no more ukus to my left.
12:03I try busting out the peace offering again.
12:07The opelukalas and little khali's definitely interested.
12:11I see some big omelus far off into the distance, but they're so far away.
12:17It doesn't seem like my tricks are fooling anyone.
12:19I need to spin around, say goodbye to these opelukalas,
12:24come up with a better game plan.
12:26But first I definitely gotta swim up and get some fresh air.
12:29A spotted eagle ray swoops on down below and it gave me my brilliant game plan.
12:36I'm gonna swim on in and go eat some food because I'm starving.
12:47Strikeout pancakes and bacon for brekkie.

13:19So in Hawaii, we like to eat our popcorn with furikake and arare.

13:26So we're mixing in some pineapple, guava, and banana for that tropical panties.

14:03The wind really picked up, but I've been really enjoying that nice breeze.

14:19We got the water loaded with Palu because down below there's a 20-pound uku whacking the chum.
14:38I get down to the bottom and there's a big school of Moana collies right here.
14:42I give them the bento sign, but no signs of that big ol' uku.
14:49A massive school of Opelukalas rolls in.
14:58On the bottom left, Bradales takes a shot.
15:01He nails one and the kala scatter to the right.
15:04Then they scatter to the left.
15:05And now's my opportunity to try and swoop on in and snipe one.
15:13I got a nice shot on him and we definitely got some killer grinds for Din Din tonight.
15:18I try to offer these guys another peace offering.
15:22See if that big ol' uku will come back because after three peace offerings you cannot ignore that.
15:27But he most certainly did.
15:29And now I'm out in the depths looking at this tasty Moana Collie.
15:33There's two of them here, but the one that I want is playing hard to get.
15:37I'm thinking about lunging on him right here, but I can tell he'll swim away.
15:42So I pull back, kick back and relax.
15:45And I'm hoping my oxygen tanks will allow me to wait them out.
15:59I pull this beautiful Moana Collie up from the depths.
16:07I slide the shaft out of them and I just gotta admire these gorgeous purple colors.
16:14The sun is going down, so this is the last drop of the day.
16:18And I'm looking around at this big minefield of spiky vana.
16:22I found a nice spot to nestle in so I don't poke my pico.
16:26But it's kind of the same story out here.
16:29Just a bunch of pelucalas everywhere.
16:32Instead of throwing the peace offering, I throw them the shaka.
16:35Give them the bentos.
16:36And next time they'll bring me a nice uku because we'll be working together.

16:52It's a beautiful sunset going down.
16:54But right now we're just getting ready for some Kala Ushi.
17:02I got a nice big fat ribeye for dinner.
17:08Oh my gosh, we're so hungry.
17:10Two dives today and no more nothing really.
17:14But we did get this nice Opelukala and a nice Moana Collie.
17:18But Aless is going to make us some fancy Kala Ushi.
17:27First, he's going to slap some rice on a Nori.
17:30Lay down some Kala.
17:31Put some avocado.
17:32No more rollers, so we got to use the Nori wrapper.
17:35Roll them up tight.
17:36Cut up the perfectly cooked ribeye steak.
17:38I already ate half of it.
17:40And Bango Kala Ushi.
17:45Unagi with the avocado.
17:49That freshly caught Kala with that freshly cooked rice.
17:57That's the first one I made.
17:58And Kala is such a great fish to use.

18:36The junk thing about this campsite is that it's surrounded all by keave trees.
18:41These trees have massive thorns on their branches that fall on the ground,
18:45so you can't walk all over here.
18:46Really good firewood, though.

19:02It's kakao time, so I'm going to whip up some poi balls for breakfast.
19:06One bag poi, three and a half cups mochiko, one and a half cups sugar, two cups water.
19:11Mix them with your dirty hands, and you like them tick like this.
