01:14It all starts with cocoa beans, which are harvested and shipped to us from tropical regions around the world.
01:21We send the cocoa beans through large cleaning machines that screen and thoroughly remove unwanted parts like pulp and bits of cacao pot.
01:30Our cocoa experts carefully select, sort, and combine beans from various countries in precise amounts to achieve that unique and consistent Hershey's flavor.

02:34Hey everyone, below me are milling machines which grind cocoa leaves into unsweetened chocolate.
02:42Mongo leaves have been drowned down like this for thousands of years.
02:46Milling machines generate lots of heat through intense pressure and friction.
02:51The grinding turns cocoa leaves into the smooth, dark liquid used to make milk and dark chocolate.
03:04You can see the difference between the two and a half hours of the night.
03:08I am going to show you how to use the milk machine.

03:20The milk machine is going to break down like this for thousands of years.

03:38Part of my job is to make sure all of that milk meets our high quality standards.
03:58Once it passes testing, we mix sugar into the milk using large batching tanks.
04:04We pasteurize and condense the sweetened milk and then blend in the perfect amount of unsweetened chocolate.
04:10This is where the art of chocolate making all comes together.
04:14As the mixture cooks, it begins to form delicious little pieces that we call chocolate crumb.
04:34This is where the first is all consistent.
04:36The whole thing is smooth.
04:42It takes one, two, three, real simple things.
04:44It's bitter and a little bit of math.
04:46It tastes love all over the world.
04:50We dry the chocolate crumb into a coarse powder.
05:01Then we mix in the cocoa butter we pressed out earlier and add a dash of vanilla.
05:06This brings out the chocolate's rich taste and creamy texture.
05:10And of course, that wonderful smell.
05:13We feed the chocolate crumb through steel rollers that grind and refine the chocolate until it reaches a smooth, uniform consistency.

05:31How do you find these conching machines use big granite rollers to smooth and transform refined crumb into milk chocolate?
05:42The conching process mixes and heats the chocolate, developing the rich flavor and color.
05:48Heavy rollers smooth out the refined crumb until it reaches the silky liquid texture of milk chocolate.
05:56Let's get inspired right now.
05:58After conching, we temper the milk chocolate, heating and cooling it to just the right texture and consistency.
06:07During tempering, we can mix in other ingredients such as roasted California almonds.
06:13Next, we pour the milk chocolate into molds and send them on a bumpy conveyor ride.
06:18Then we send the molds through cooling tunnels that solidify the chocolate.
06:23All of that fresh, delicious Hershey's chocolate goodness is finally ready to be packaged.
