00:12And those cakes turn into more cakes and pies and cookies and pizza.
00:17In this enormous factory where I work side by side with my family.
00:21Well, I'll tell you.
00:22I said no steam.
00:24Running a small bakery was tough.
00:26But running an empire...
00:28You're in my world now, Junior.
00:30You can down, down, down when your family's by your side.
00:33It's a piece of cake.
00:37Every day at the factory, we ship tens of thousands of cakes across the country.
00:41If they don't get the out of the oven fast enough, that line can't start.
00:45It's the bread and butter of the business, and I love it.
00:49But that doesn't mean our custom cake orders are slowing down.
00:52This week, you won't believe the cake requests we got.
00:55The Kennedys are American icons.
00:58They're basically our version of the royal family.
01:02Ask not what your country can do for you.
01:06Ask what you can do for your country.
01:09So when Anthony Shriver, JFK's nephew, called me for a cake, I was honored.
01:15I mean, presidents, senators, and a baker from New Jersey.

01:30Last week was kind of boring with my internship.

01:39But this week, we're going full steam ahead into a cake build.
01:41So I'm kind of excited to get my hands dirty and, like, work with some stuff.

02:07cake consultation with Anthony all the way to the delivery.

02:44Best Buddies is a nonprofit that creates opportunities for individuals with intellectual and developmental
02:50disabilities.
02:52It's not only about when the kids are little.
02:55After these kids go to school, what are they doing?
02:57This organization helps so many of them find employment and social opportunities.

03:06You know, the event over the weekend is great.
03:07We have so many people with intellectual disabilities at a tent.

03:10Well, there'll be a thousand people at this cycling event.

03:13We have a 5K run walk.
03:14The Carl Lewis, the great Olympic athlete, been a good friend of mine.
03:18And we have a huge New England clam bake under the tent and a great dessert this year.

05:00This week, I got to finalize the next phase of the factory construction going in.
05:07We're growing his business.
05:08We're scaling it.
05:08To go to the next level of the factory, it's spiral freezers.
05:12Right now, in a day, we could probably do 30,000 to 60,000 cake slices.
05:17With the investment into this freezer, we probably could do 120,000 in a day now.
05:27So I'm going to be doing a lot of measuring and figuring, and things are going to get changed,
05:31and it's going to be a logistical nightmare, but it's important.
05:35Do I get a vacation during this construction?

07:53And they really try to help these people get jobs and do so many different things.

08:07With that being said, they give out medals, so I think there should be some sort of medals

08:11And we top it with a big trophy.

08:14Of course, we're talking about Kennedys, we're talking about Olympians, we're talking about
08:19Carl Lewis.
08:20How about like a bottom tier that's got like Americana bunting?

08:29So for this Best Buddies cake, the bottom tier, I'm going to do some bunting in red, white,
08:35and blue.
08:35There's nothing more Americana than that.
08:37And on top, we're going to do a giant trophy with a lobster sculpted in it.
08:42And then we're going to paint this trophy up with edible silver paint and just put a couple
08:47modeling chocolate details to finish it off.
08:50Like medals on the cake and a sign with the Best Buddies logo right on top.

08:58I ain't a sport.

08:59Hyannis port.

09:01So I'm thinking of flying the cake.

09:07My buddy's got a seaplane.

09:10You want to take off in the East River.
09:13Hyannis port is a minimum of five, six hour drive without traffic.
09:16I need to get right back to work, okay?

09:19I got a million things going on.
09:21The only way to do that is by getting a jet or a seaplane.
09:26So you want to know why I'm using a seaplane?

09:29There's a door that's like a four by four.

09:45I could build a cake to withstand being flipped upside down, okay?
09:54It's in the construction.
09:55So basically I have a pipe going through the cake that's screwed onto the board that should
10:00keep it, you know, from going down.
10:02You guys make the best buddy logos.
10:04You do the molds.
10:05You two fill the cake.
10:06I got a meeting about the blast freezer.
10:09Unfortunately, I got to go whirl my winds and figure out the wind chill.

10:15So I'm going to build a freezer.

10:20The key to this best buddy's cake is to make it not only solid to withstand the plane
10:31ride, but make it aesthetically beautiful.
10:35Ana and my son Buddy are going to deal with all the lobster sculptures, all the metals, and
10:41all that kind of stuff.
10:42Then I got Jess working on the Keith Haring logo.
10:47And then this structure is very important, so I tasked Mauro with building this thing
10:52to last.
10:54You know, before I started making cakes, the way I met my wife, actually, is I used to
10:58be a carpenter.
10:59I know about plywood, two-by-four strength, and all that stuff.
11:02That's why usually Buddy tells me to go into a workshop, cut the boards.
11:05You know, when you build a cake, it's the same thing like building a house.
11:07If it doesn't have a strong foundation, flop.
11:09So, these are the trim for the trophy.
11:15You can just grab yourself some black and just make a bunch of stuff, because it's going
11:19to kind of go all over the thing.
11:22Ana's teaching me kind of how to make the trim for the trophy.
11:26I'm happy to be on the cakes now, because before I was allowed to be here, I had to shadow
11:31my dad.
11:32It was day-to-day things, sitting and meeting, so it's a lot more fun doing the builds.
11:36This might help squash it in and then trim off.
11:40I'm having Junior make the molded elements that are going to decorate the trophy, but
11:47it's a little bit fussy, and it has to be done right, because these are so visible and
11:53really important to the finish.
11:55Otherwise, it's going to look sloppy, and that's no good.
11:58I covered the whole board with purplish modeling chocolate, and now I'm cutting out the circles
12:03in black, and I'm cutting the same exact size out of the purple, and then placing, and then
12:09doing each row one by one.
12:10There's a lot of logistical stuff with this cake.
12:12It's got to be a certain size.
12:14It's got to fit through the door.
12:14It's got to go on an airplane.
12:15It's got to be able to take off from the river, not at an airport.
12:19This cake has to be built super strong.
12:21In order to provide stability, we're going to put a nice pipe going right through the whole
12:25cake from south all the way up to north.
12:28The lobster is the centerpiece of the trophy design.
12:33I think it's the thing that makes it feel like it's part of the theme.
12:38It's a cool-looking lobster you got there.
12:40It's starting to look like a lobster.
12:42It sure is starting to look like a lobster.
12:45If we do it where we're staying, how long is it going to take you guys to put it in and
12:50get it up and running?
12:51So it's day one of the cake build, but I'm engineering the spiral freezer, because I don't
12:56know if you know that, but that's another thing that I do.
12:59I engineer spiral freezers on the side.
13:01Now, you like how I angled that a little bit, huh?
13:04Yeah.
13:06Spiral freezers work with wind chill to freeze the cake faster.
13:10But when they come out, they'll be like rock hard, and they'll be easier to cut.
13:15This is going to double our production.
13:18We're going to push it as tight as we can to there.
13:20We're going to enter this way and exit that way.
13:24Spiral freezer is going to go dead smack in the middle of a decorated room.
13:27We've got to move the air conditioning, because the new room is going to be there anyway.
13:31So honestly, for our flow, this is going to help our flow tremendously.
13:35You know what it is, and then we'll go from there.

13:40That's perfect.
13:41It's a pain in the ass, and I've got to knock walls down and do a lot of construction and
13:46everything else, but it's for the greater good and for the long haul.
13:57We've got the base of this cake done.
14:02It's sturdy.
14:03For this cake, we've got to do a lot of bunting.
14:05We've got to cut all these strips, put them on there, and secure them very well.
14:09It's not going to make it on takeoff.
14:10So you've got to do like little pieces, maybe three bunts at a time.
14:13It's easy to manipulate here.
14:15Just got to keep on doing it, then doing it, then doing it.
14:20Can you do this a little thicker?

14:22They want it lighter, and you want it thicker.
14:24The thinner model and chocolate that we go, the more likely it is to break.
14:28So I just want to go a little heavier, never put a cake on a plane, so I don't know how
14:33that's going to work out.
14:35I really hope this looks nice.

14:39Junior and I have been working on the decorative elements for the cake, including the medals
14:44and the moldings that go on the trophy, and I have to say that he's doing a great job.

18:27Everyone's, like, not really realizing it, but, like, this is, like, literally the most important part of the cake.
18:32The one pipe supporting everything, it's got to be able to hold it up.

18:38So, now we have to modify.

18:43We miscalculated on the length of the pipe.
18:47We've got to take it out and recut it.
18:49We're going to piece 17 and a half from the top of here.

18:53It's a step that we didn't account for.

19:10The number one thing for the best buddy cake is stability.

23:35I'm trying to anchor the handles into the sides of the trophy, which has some challenges
23:41because I can't actually make the anchors as long as I'd like, and I'm concerned that
23:46they're going to fall off when they're on the plane and it's in the air.
23:51Are we just going to fully go straight paint?
23:53Yeah, we're just going to paint the whole thing.

24:30When I'm in the decorating room, my employees respect me, not because I demand it, because

24:46My dad singled me out in front of everyone.
