00:07In the northeast, Podlasie, with the Bialowieża forest.

00:11In the southeast, the Podkarpatskie, with the Bieszczady mountains.

00:16These twin natural oases are far apart, but both are sparsely populated

00:22and home to bison, wolves and lynx.

00:25Today we'll be visiting Podkarpatskie, a land of wild ridges,

00:31comfort mountain food and fairytale castles.

00:42Cests, these are the Bieszczady mountains, remote, wild and open.

00:47They say here is just you, the wind and endless meadows.

00:52Let's see if that's true.

00:54Bieszczady National Park covers over 290 square kilometers

01:00and it's part of the UNESCO East Carpathian Biosphere Reserve.

01:04Nearly 80% of the park is natural forest.

01:10Many say this is the most romantic part of Poland.

01:13Here visitors can find refuge from the hustle and bustle of city life

01:18by hiking and admiring the amazing scenery.

01:21And it's exactly what me and Barbara are going to do.

01:28Our walk through the forest brings us to the start of the main Beskid Trail.

01:33Bieszczady is home to the wildest part of the trail, with high pastures known as Poloniny, where shepherds once came to graze their sheep.

01:43This is Polonina Vetlininska, an eight-kilometer ridge, rising to 1,255 meters.

01:53From here the view is breathtaking. We can see mountain ranges and there are only a few houses inside.

02:07These mountains are an increasingly popular destination and it's easy to see why.

02:14Look at this view. This is Bieszczady at its best.

02:39It's time for a well-earned bite. I've arrived at the gate of the Bieszczady Mountains.

02:49Lesko is a small mountain town, likely founded in the 14th century, with a rich history and multicultural heritage.

03:02It's in this picturesque little town that I'm about to discover the tastes and traditions of the mountains

03:08by cooking a local dish.

03:20Today my teachers are going to be a group of women from a countryside association

03:24who regularly cook together, keeping local recipes and traditions alive.

03:29So what are we preparing today?

03:31Our regional dishes, the most regional dishes,

03:35are the vegetables from the dried ground,

03:38that are cooked in dried leaves.

03:42And the other dishes are our regional dishes,

03:45which are the so-called vegetables.

03:49Bieszczady cuisine is renowned for its simplicity and satisfying flavors.

03:53It's based around local ingredients and blends the flavors of lots of different cultures found on the borders here.

04:00The secret is that the best, the better it is, the best.

04:14There are lots of types of gulopki,

04:15but the one we are preparing today follows a traditional recipe from Bieszczady.

04:20chadi just a few ingredients are mixed together and it's very easy and quick to make at least

04:26it is for these ladies while the rolls are in the oven for about two and a half hours we have time

04:32to prepare another delicious local dish called projaki it's a classic recipe with simple

04:39ingredients flour eggs buttermilk or yogurt salt and baking soda they can be served hot or cold

04:48and often spread with jam or garlic butter it's a humble recipe passed down through generations

04:55that is now a symbol of local pride
