00:00You know, I had a scientist tell me one day that the largest experiment ever perpetrated
00:06on mankind without their permission was hydrogenated fats.
00:10And I really wasn't clear about, you know, what he was referring about.
00:15And just to clarify that for all of you, trans fats are man-made.
00:22And basically, if you want to clog your arteries, you know, one of my writers here said just
00:29dial 1-800-TRANS-FAT.
00:31One of the problems that evolved from trans fats is that your body can't get rid of them.
00:37And you have a very difficult time moving them through.
00:40And so consequently, we've seen statistics that are almost mind-boggling from 30,000 coronary
00:51artery disease deaths a year contributed to by trans fats to up to 200,000 heart disease
00:58heart attacks that can be attributed to the use of trans fats in our food.
01:04You'll find it in anything from French fries and chicken tenders to cookies and other baked
01:08goods.
01:09And now many people want to delete trans fat from their diets.
01:1349 News reporter Craig Gold tells us whether Kansas has any plans to keep it away.
01:18Craig?
01:19Yeah, if you've eaten any food that lists partially hydrogenated oil as an ingredient, then you
01:23know it has trans fat.
01:25A dietitian we spoke to today says that no amount of trans fat is really safe.
01:30Consumers now know about this and are demanding change.
01:34It's cheap, it makes foods taste good, and it gives them a longer shelf life.
01:39At one point, trans fat was even thought to be a healthier alternative to other cooking fats.
01:44But health experts have known for years now the artery-clogging consequences that come along
01:49with it.
01:50What it actually does is raise your LDL, your bad cholesterol, and lowers your HDL, which
01:56is your good cholesterol.
01:59Trans fats are found everywhere, from the crust at your local pizzeria to the high-end restaurants
02:04that serve breads, pastries, and desserts.
02:07Foods that are fried or baked often contain partially hydrogenated vegetable oil, or trans fats.
02:14It's estimated that the average person eats about six grams of trans fat a day, almost
02:19five pounds a year.
02:20We're eating about 2.5 to three times more trans fat than is recommended.
02:25While trans fat might make your food taste better and last longer, it is not healthy.
02:31Saturated fats and trans fats both tend to raise the bad cholesterol.
02:34And we certainly know that people with higher levels of bad cholesterol appear to have more
02:40heart disease and stroke.
02:42Some researchers are claiming that there are as many as 50,000 premature deaths each year
02:46linked to eating trans fat.
02:48As trans fat is removed from the cooking products, it's being replaced by other healthier oils
02:53like canola and safflower.
02:57Trans fat comes from a mixture of vegetable oil and hydrogen gas.
03:01Hydrogenated oil is cheaper and lasts a lot longer than other cooking oils.
03:06Calorie for calorie, trans fat is the worst thing that's in our food supply.
03:12Doctors estimate trans fat kills 30,000 Americans a year.
03:16The government says consumers should limit their intake to no more than two grams of trans
03:20fat per day and eliminate it completely if possible.
03:24To many, trans fatty foods like french fries and cookies seem harmless because they're perceived
03:29as being a part of Americana.
03:31The consequences, doctors say, are real.
03:34Trans fats really are a very concerning aspect to the current American diet.
03:41Dr. Scott Miller is a San Diego area board certified plastic surgeon who has performed thousands
03:46of body contouring procedures on patients who try to deal with the after effects of eating
03:52too much of a bad thing.
03:53Dr. Scott Miller not only do they cause high cholesterol, plaque accumulation in the arteries
03:59and subsequent heart disease, potential for heart attack and stroke, but they also create
04:05an addiction to that taste and that flavor.
04:09These high trans fat foods are so much a part of the way we're raised that when you look
04:13at some of these foods we grew up with packed in our lunches every day, it's hard to see
04:18them as something bad.
04:20Trans fat is very desirable to the food industry because it helps keep foods fresher for a longer
04:26period of time.
04:27But these same chemical properties also make trans fat quite unhealthy.
04:31Studies show that eating trans fat increases cholesterol levels.
04:35And now new research links it to an increased risk of heart disease in women.
04:40In a study of around 500 nurses, doctors actually measured the amount of trans fat in the women's
04:46bloodstream.
04:47They found that compared to women who had the lowest levels of trans fat in their blood,
04:51women with the highest levels had three times the risk of heart disease.
04:56Many food manufacturers and restaurants are removing trans fat from their products and
05:01a recent law requires that packaged food be labeled for trans fat so people can know what
05:06they're eating.
05:08Consumers should be aware that not all products have trans fat on the label yet.
05:14Because of increased pressure from the public, some restaurants have parted ways with their
05:18trans fat loaded cooking oils.
05:20But if the dangers have been known, why has it taken so long?
05:23No one's forced them.
05:24But now, you know, the consumers, you know, want to be healthy.
05:30Some wouldn't mind if restaurants statewide took a page out of the KFC and Wendy's playbook
05:34by eliminating trans fat themselves.
05:38Whether it's fried, grilled, or baked, 24,000 New York City fast food, dine-in, and takeout
05:45restaurants must phase out artery-clogging trans fats by July 2007.
05:51It is the first city in the country to ban artificial trans fat oils.
05:55Bakeries and donut makers will have until July 2008 to make the switch.
06:00Some restaurant owners and advocates who oppose the ban say the government is going too far
06:05in the name of health.
06:07Other eateries voluntarily changed to healthier cooking oils before the ban.
06:12Last month, Kentucky Fried Chicken joined the ranks of other nationwide chains like Ruby
06:15Tuesdays and Chili's announcing it would phase out hydrogenated oils at all of its franchises.
06:22Fast food giant McDonald's is still testing out alternative oils, but with the new ban, the
06:26golden arches will have to be trans fat free in New York City by summer.
06:36Trans fats have replaced saturated fats as the worst type of fat.
06:40They increase the risk of stroke and coronary heart disease, which claims the lives of half
06:44a million people a year, with ever increasing numbers being women.
06:49The comprehensive nurses health study reports that trans fats can double the risk of heart
06:54disease in women.
06:55Even worse, trans fats not only raise total cholesterol levels, but they also deplete
07:01good cholesterol, HDLs, that help protect the body from disease.
07:06So why are these dangerous ingredients put in our food?
07:09Quite simply, profit.
07:11They are a cheaper ingredient to use, and they taste good.
07:15Food manufacturers utilize trans fats to achieve a longer shelf life for their products.
07:20Some processed foods, like cookies and crackers, can stay on the shelves for years, due in
07:25part to trans fats.
07:27So with this in mind, the FDA requirement to disclose trans fats on labeling seems like
07:32a very important thing, but there's something very wrong.
07:35The problem with the FDA regulation is that zero does not equal zero.
07:39Food manufacturers are allowed to label products as having zero grams trans fats, even when the
07:45products actually contain the harmful ingredient.
07:48According to the FDA rule, if a single serving contains a reportable amount of trans fat, which
07:54is 0.5 grams or more, then it must list the amount on the supplement facts panel.
08:01This means that shoppers everywhere unknowingly consume a multitude of products that list zero
08:07grams trans fats, when each product could contain nearly half a gram of trans fat per serving.
08:14This can add up in a hurry, and it can add up to trouble for your health.
08:18So when you plan your next meal, follow these guidelines to avoid trans fat in your diet.
08:24Shop the perimeter of the grocery store.
08:26Fresh fruits, vegetables, choose items in their whole food form with the least processing.
08:32Avoid fast foods such as fried chicken, biscuits, french fries, and anything fast food establishments
08:38cook with oil or lard.
08:40Avoid processed foods like crackers, most cookies, and baked goods.
08:45Read ingredient labels.
08:47The ingredient list still discloses the truth if you know what you're looking for.
08:52If the ingredients include any type of hydrogenated or partially hydrogenated oils, that product
08:58contains some amount of trans fat.
09:01So read the labels on everything you buy and avoid any product that contains hydrogenated
09:06oil or partially hydrogenated oil, taking the time to make a small change in the way you
09:10shop can make a big change in the health of your family.
