03:25It has four or five different kinds of mushrooms and you just kind of just boil it and reduce it down and kind of fortify it.
03:33And it takes hours just to basically extract all of the umami out of the mushrooms.
03:38The work goes into making a good soup.
03:40Let's take a look at that monkey brain.
03:42We really want to know what that is and how are we making that.
03:45So just for context, at the end of the show, for the final competition, the challenge is to make a Eastern cuisine monkey brains.
03:52And apparently this is how we're going to achieve it.

04:14Uh, we got molds and we just kind of pour into a mold and it basically takes a shape.

04:20That's how monkey brain is made.

04:29So inside this cage, we are going to have a monkey.

07:30I use these beautiful knives over here to carve out of a block of ice.
07:34In a very dramatic little scene where it starts with a block of ice.
07:38And I chop it massively which turns it into sort of a pyramid shape.
07:43And then I just have at it.

07:46Let's go with a minute.
07:47A minute of a minute of cutting.
07:49We get this beautiful mountain shape here.
07:52Which I will then use as my extremely dramatic and over the top plate for my dish.

08:57So a ham like substance.
08:58So if you don't have pancetta you can use bacon.
08:59Courgette or zucchini if you will.

09:04Let that just reduce and then you add in some white wine.
09:06And then you add in your linguine.
09:07Just a very full flavored and spicy dish.

09:15It's one of my favorite dishes to make.
