03:49Almost as intoxicating, the gondola ride to Jordanel Lookout.

04:39It's kind of tradition to come here and get a burger and ski all day.

05:21It's so ethereal, it's like I'm on a movie set.

05:27Jake is at the reins of this snowed-in sleigh ride.
05:32This is the way that they travelled in the 1800s, 1700s.
05:37It's very reminiscent.
05:39I have some pioneer ancestry, you know, crossing the plains to come settle the West.
05:44You know, it kills me with a little sense of pride that I get to come and do this and then sharing that heritage with my ancestors for sure.

06:39We've got this magnificent stream, which is actually the start of the Dewant River, which flows all the way down to Haver.

06:49Tasmania's iconic River Derwent begins its journey from the equally iconic Lake Sinclair, Australia's deepest freshwater lake.
07:03The aim is to place a fly upriver and it will come towards us.

08:05Supernaturally stunning Lake Sinclair is at the southern end of Cradle Mountain Lake Sinclair National Park.
08:12Surrounded by world-renowned alpine walks, ranging from steep, challenging multi-day treks to more level terrain.
08:21This has to be the grandest and longest entry to any hotel I have ever stayed in.
08:27A boutique hotel in the middle of a glacial lake?
08:31Pure Tassie.
08:34Connected only by a 250-metre-long concrete flume, this ex-hydro station boasts nine very stylish rooms.
08:42Feels like it's sleeping on water.
08:48Let's call it the deluxe edition of the classic water bed.
08:54But if you don't find the sound of water lapping beside your bedroom window soothing, there are land-based options.
09:00This one a little further of a walk.
09:07Oh, and this is why.
09:10Tucked away beside the lake, a very private two-storey cabin surrounded by ancient myrtle forest.
09:17This is what a sophisticated, secluded wilderness retreat looks like, folks.
09:22I'd call this understated indulgence, which also applies to the food.
09:27The produce is 100% Tasmanian and it has to pass the pub test of being local.
09:33For our chefs, it's more about what not to put on.
09:36They've got so much to choose from.
09:38The communal dining area serves breakfast and dinner daily.
09:42As for lunch...
09:44Our larder offering, again, 100% Tasmanian produce.
09:47Have it in your room, have it by the fire, put it in the picnic and off you go.
09:52It's the sort of place where you can do as little or as much as you want to do.
09:57It's no secret, I'm a do-as-much-as-you-want kind of guy.

11:54It's got everything.
11:55And a lot of the unique features come from the fact that it is so old.

12:22And embedded in the sand on 75 mile beach is the rusty remains of SS Mohino.
12:28Shipwrecked here almost 100 years ago.
12:32I mean, if I was going to get stranded, this wouldn't be the worst spot.

12:46But my personal favourite.

12:54Is Lake Mackenzie.

12:57A perched dune lake, which means...

13:04They're quite a unique type of lake.
13:06And to give you an idea, there are about 100 lakes on the island.
13:10But this is certainly the jewel.

13:25Gari is a quick detour off Queensland's Pacific Coastway.
13:29The ultimate coastal drive that takes you from rainforest, to reef, to this.
13:36We're heading into the coloured sands now, Rainbow Beach.
13:39Depending on which book you read, there's between 6 and 72 different colours of sand.
13:45And I think the guy who got 72 got a little bit carried away.
13:48I reckon he bought a Dulux colour chart and went off-white, off-white, dark white, champagne, beige.
13:54And this dunal system here runs all the way back down towards Noosa.
13:59It's so special because it's the oldest intact dunal system left on the planet.
14:03It goes back over 800,000 years, unchanged, untouched.
14:06The Dunes Tower, 80 metres over this stretch of Rainbow Beach.
14:11Suitably named the Coloured Sands, you can walk or drive this stunning stretch of coastline.
14:18I really enjoy bringing people here.
14:21And this particular area is one of the most beautiful on the beach at the moment.

14:31But for a view with a bit more blue, steer south to Double Island Point Headland, where the lighthouse has been guiding sailors since 1884.
14:47And I think this is one of my favourite views yet.
14:52And back on the Pacific Coastway, I'm guided by my primal drive to eat.

14:58Being seaside calls for a surf club lunch, obviously.
15:08Refuelling is top priority today because tomorrow's adventure is going to be epic.
15:14And Queensland's weather gods are smiling this morning as we head a little further south to Double Island Point.

17:39Specifically from Mossaleve, a mountain in the French Pre-Alps known as the Balcony of Geneva.

17:54Sharing magical mountains and cuisine, this is the ultimate symbiotic relationship, European style.
