00:00This is our take on a French classic chicken chasseur.
00:03Begin by blanching your tomatoes in boiling water to loosen the skin
00:07before transferring them to a bowl of ice.
00:08Once cooled, we're going to peel and de-seed the tomatoes and set aside for later.
00:12Next up, we're going to heat a pan and fry our chicken legs until beautifully golden on both sides.
00:17Remove from the pan and set aside.
00:18In the same pan, we're going to add in some diced shallots, some butter and saute
00:21until the shallots become beautiful and translucent.
00:23Next up, we're going to add some chopped garlic, slice mushrooms and cook until soft.
00:27Stir in your tomato paste, fresh thyme, red wine and bring the mixture to a boil and reduce by half.
00:32Next in goes our chicken stock, followed by the chicken legs.
00:35Place the lid on your pan and simmer until the chicken is beautifully tender and cooked.
00:39To finish, remove the chicken legs from the pan, place it onto your plate.
00:42Finish the sauce by adding in fresh herbs, your tomato dice,
00:45along with a little bit of butter and final seasonings to finish.
