00:00In fact, we had a place, and my wife didn't know that I did this, but I took the bathroom out,
00:07I took the toilet out, I took the shower out, I put cedar planks because it was a bathroom
00:12sort of down one end of the house that no one really used, and I started to make charcuterie
00:17in there, so I started to make prosciuttos and, you know, like reading and learning from
00:23people along the way and just sort of started doing that, and it went quite a while before
00:28she found that I'd done it.
00:30Wait, what was that moment like?
00:32Tell me about this moment when she discovers, like, the ham closet or whatever it is.
00:37I think I told her I was using it for wine storage, so she was kind of like, okay, you know,
00:42I understand why that bathroom's kind of off limits, but I think she might have walked in
00:47there one day and smelt that there was a bunch of meat hanging in what was formerly a bathroom.
00:54I never served this, of course, to guests.
00:56This was just my R&D.
