Akshay Parkar, who trained with some of the best chefs at the Taj, worked on a cruise ship not too long ago. But when the pandemic struck, and he lost his job, Parkar decided to bring his expertise to the streets of Mumbai.

00:00Which I make is different because I have whatever I have learned from those steps in the Taj who I taught me

00:10I was working as an international chef for Princess Cruises for last seven years
00:30They told me that it is not yet sure how long it will take to restart the job
00:51So my dad had an operation, he had two operations
00:55which was like 16-17 and my mom had a severe fracture in her elbow
01:00so that was on 18 so and my mom has asthma so it was all the burden on me so
01:06being an international chef I was getting good money but the thing is
01:10the medical prices here in Mumbai you know how expensive it is
01:14They forced me to do that you should start with something of your own
01:24you have worked for many years for anybody else somebody else
01:29but now you start for yourself so I started preparing the biryani at home
01:34I started my stall with small box and two small pots with that one for two kgs
01:46and then it grows it has grown now now I'm preparing
01:50seven or eight pots of chicken and two-three pots of veg

02:17I've come all the way from Wadala there are already 10 people in front of me
02:21now another 20 people are there looks like he's very popular

02:30wake up every morning around 6 start around my job 6.30 start to prepare everything
02:36in the afternoon when I finish my batch I come back again I do the setup everything
02:42count everything and then again I start to prepare new batch for the evening
02:55you have to come in the evening, the stall will be open in the evening
02:58Indian food I know from the scratch because I've learned from Taj and all those chefs.
03:28But I wanted to explore more.
03:35I have visited almost 23 or 24 countries.
03:38I have come across all the people staying there, their food habits, how they deal with their daily, their palates.
03:50I used to stay with in my granny's house.
03:53My mom used to go to work and then my granny used to cook food.
03:56So she used to tell me, like, we have to put the spices like this.
04:01We have to rub the meat with the spices like this.
04:04I used to see the TV shows where they, you know, that Thana Kazana and everything.
04:08I used to start to see the recipes, how they prepare everything.
04:13Then I started making that at home.
04:20I want to make it a small chain so I can reach people who are very far.
