00:00A sensory boost, a visual delight and a palate pleaser par excellence.

00:26It's food fit for a king.

00:29In fact, it was created as the food for the kings during the Mughal era.

00:35In the late 18th century, in the royal kitchens of Delhi's Red Fort, the bastion of the

00:41last Mughal emperor, Bahadur Shah Zafar, the biryani as we know it today was born.

00:48Soon after, its fame and appeal spread through the length and breadth of pre-partition India,

00:54with every province, state and culture adapting it to suit their palate and in the process,

01:00conferring immortality on the dish.

01:24And when it came to India, the spices were a perfect fit for it, so when the Nawab saw

01:41the biryani, which was actually called Biryan, he asked his Khansama to do something about

01:47it.

01:48He said, our army can't deliver the meal properly, and they have problems, so make something

01:52else.

01:53So, the khansama and the doctors selected the spices, and it was very easy to get them

01:59in India.

02:00So, they made it, and when they made it, the name of the biryani didn't fit, so they named

02:07it Biryani.

02:08So, when it became Biryani, it became famous in India.
