00:00Patthai, a famous Thai fried rice noodle, is not just a street food,

00:03but also a national dish that is influenced by the policy of Great Thailandism and has a strong political taste.

00:11Patthai originated in the Second World War.

00:13The 10th Prime Minister of Thailand, Luan Pi Wen Songkan,

00:16in order to eliminate the influence of the Western power,

00:18tried his best to cultivate the local sense of national identity,

00:20and carried out many Thai movements,

00:22including changing the name of the country from Siam to Thailand,

00:24making the people speak Thai,

00:25the Chinese changed their surname to Thailand,

00:27and encouraged them to eat Thai food.

00:29He also added the Thai version of fried rice noodles with basil seeds and fish sauce,

00:32replacing the Chaozhou fried noodles that Thai Chinese like to eat,

00:36because pork is considered a Chinese food.

00:38Chaozhou fried noodles are thus de-Chineseized

00:40and shaped the identity of Thai people.
