00:00First things first, we're going to make a really nice caramel.
00:02Add 150 grams of caster sugar to a pan,
00:04followed by a couple of star anise.
00:06Next, lightly crush four cardamom pods.
00:08This adds a lovely, warm, spicy, sweet flavor.
00:11Then wait for the sugar to melt and form a caramel.
00:14The smell of that caramel is amazing.
00:16Now cranberries in.
00:19Cranberries are very tart and acidic,
00:20but balanced with the sweetness of the caramel and apples,
00:23they give the sauce a lovely, dry, sharp note.
00:25Next, core, peel, and thinly slice two apples.
00:29Now the cranberries are starting to break down.
00:31Apple in.
00:33The smell is fantastic.
00:35It's a sort of sweet, sour, spicy.
00:38De-glaze the pan with a touch of port.
00:40De-glazing dissolves all the lovely, sticky, caramelized
00:42bits of food that are stuck to the pan
00:44and incorporates them into the sauce.
00:46Next, add the zest of an orange, and for another layer
00:49of fragrant sweetness, squeeze in the juice.
00:51Then cook on a low heat for 5 to 10 minutes to thicken.
00:54If you really want to get ahead, this sauce
00:56can be made three or four days in advance.
