01:26It is cultivated above all in Spain, Portugal, France, Italy and Turkey
01:33and, compared to wheat, it needs a smaller amount of water
01:38and also a smaller amount of fertilizers and fungicides.
01:42For this reason, in 2018, it received a very important award
01:47dedicated to the sustainability of food.
01:51I add that the flour of the Tridordeum is quite dull,
01:56so it is widely used in the kitchen to prepare both salty and sweet products,

07:52i.e. good cholesterol, while also reducing LDL cholesterol.
