Chef Tathong is one of the big fans of dried fish products in the Philippines.

And this is his inspiration for the very easy dish he shared with us.

Let's start with the frying of our Daing na Bisugo.

And here it is.

We just sautéed it a little bit to remove the excess salt, right?

So that it won't be too salty.

We'll fry this until it's a bit toasted.

So, what we're doing here is, we're just increasing the amount of ingredients we can use by combining these two main ingredients.

So, we'll just fry this.

We'll set aside our fried Daing.

Because we'll cook it again with our tomatoes.

I like salty food because I think the love for salty food is very Filipino.

The fried Daing won't go to waste, because this will be the base of our Sarsa.

We'll just sauté a little bit of garlic and onion.

And because this is called Kinamatisan, we'll need a lot of ripe tomatoes.

I'll add a little bit of sugar to balance.

And now, we'll add a little bit of soy sauce for color, right?

So, we're combining different forms of saltiness.

We're not using salt, but the saltiness of our Daing, and the saltiness of our soy sauce or fish sauce, so that it'll have umami, right?

We'll also add a little bit of vinegar, right?

So, what we're doing here is, we're balancing everything.

We're not making it too sour.

We're not making it too salty or too sweet.

What we're doing is, we're just balancing the flavors, so that it'll be very delicious.

If you want it to be spicy, we'll add a little bit of chili.

And now, we can now add our fried Daing Bisugo.

So, what will happen here is, the Bisugo will have a tomato flavor.
