### Aloo Ki Tikki Recipe
#### Ingredients:
- **For the Tikki:**
- 4 medium-sized potatoes (boiled and peeled)
- 1/2 cup green peas (optional, boiled and mashed)
- 1-2 green chilies (finely chopped)
- 1 teaspoon ginger (grated)
- 1 teaspoon cumin seeds (jeera)
- 1 teaspoon garam masala
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon chaat masala (optional)
- Salt to taste
- 2 tablespoons fresh coriander leaves (chopped)
- 1/4 cup bread crumbs (optional for binding)
- Oil for shallow frying
- **For Serving:**
- Green chutney
- Tamarind chutney
- Sliced onions
- Lemon wedges
#### Instructions:
1. **Prepare the Potato Mixture:**
- In a large bowl, mash the boiled potatoes until smooth.
- Add the boiled and mashed peas (if using), chopped green chilies, grated ginger, cumin seeds, garam masala, red chili powder, chaat masala, salt, and chopped coriander leaves.
- Mix everything thoroughly. If the mixture feels too soft, add bread crumbs to help bind it.
2. **Shape the Tikkis:**
- Take a small portion of the potato mixture and shape it into a flat round patty (tikki). Repeat this process until all the mixture is used.
3. **Fry the Tikkis:**
- Heat oil in a frying pan over medium heat.
- Once the oil is hot, carefully place the tikkis in the pan. Fry them until they are golden brown and crisp on both sides, about 3-4 minutes per side.
- Remove the tikkis and place them on paper towels to absorb excess oil.
4. **Serve:**
- Serve hot with green chutney, tamarind chutney, sliced onions, and lemon wedges.
### Tips:
- You can add other spices or ingredients like chopped onions or grated carrots for extra flavor.
- For a healthier version, you can bake the tikkis in the oven at 400°F (200°C) for about 20-25 minutes, flipping them halfway through.
