Prepare the Water Spinach:
Wash the water spinach thoroughly under running water. Cut the water spinach into approximately 3-inch lengths, discarding any tough stems. Mince Garlic and Slice Red Chillies:
Peel and mince the garlic cloves. Slice the red chillies. Adjust the quantity based on your desired level of spiciness. Heat Vegetable Oil:
Place a wok or a large frying pan over medium heat. Add the vegetable oil and allow it to heat up. Sauté Garlic and Red Chillies:
Add the minced garlic and sliced red chillies to the heated oil. Sauté until the garlic becomes fragrant and the chillies start to release their aroma. Stir-Fry the Water Spinach:
Add the prepared water spinach to the wok. Stir-fry for 2-3 minutes until the water spinach begins to wilt. Add Oyster Sauce and Soy Sauce:
Pour in the oyster sauce and soy sauce over the water spinach. Continue stirring to ensure the water spinach is evenly coated with the sauces. Cook Until Tender:
Continue to cook for an additional 2-3 minutes, or until the water spinach is tender but still vibrant green. Stir occasionally to prevent burning. Season and Serve:
Season the stir-fried water spinach with salt and pepper to taste. Remove the wok from heat. Serve Immediately:
Transfer the Stir-Fried Water Spinach to a serving dish. Serve immediately as a delicious side dish.
