00:45 In this Christmas episode of Straight From The Expert, I will be showing you recipes
00:48 that you can prepare this Christmas and today I will be teaching you how to make horchata
00:54 and don't worry as foreign as the name sounds, all of the ingredients are widely available
00:59 in many supermarkets.
01:00 You can also make this drink alcoholic or non-alcoholic based on your preference.
01:06 You can even put coffee in this drink, it's that versatile.
01:09 So let's get started!
01:10 So first step is we are going to be soaking our pre-roasted almonds and rice overnight.
01:19 I've already pre-toasted these beforehand but if you were to toast them yourselves,
01:23 basically what you would do is get your rice, it can be any variety and almonds and put
01:28 this in the oven at 180 degrees Celsius for around 15 to 20 minutes until the rice develops
01:35 this nice brown color and the almonds get nice and extra nutty if that makes sense.
01:43 First step, in a container, add in your almonds, add in your rice, followed by a cinnamon stick,
01:55 fresh water, there we go.
01:59 You want to fill this about halfway through or at least double the amount of the ingredients
02:05 that you put in it.
02:06 Cover this and let this soak overnight.
02:09 So what soaking overnight will do is it will soften the rice and the almonds so that when
02:15 you blend it, it will turn into sort of like an almond and rice milk for a drink.
02:21 Let's put this in the fridge.
02:23 So now in a blender, we are going to process our almonds and rice.
02:30 So let's also include the liquid that we used for soaking.
02:36 So we want to grind this until for about 5 minutes until the ingredients are well pulverized.
02:44 There we go.
02:48 At this point, I think it's okay.
02:50 Your pitcher, get a strainer and pass this through a sieve and gently strain your liquid.
02:59 Pass it through the sieve multiple times so you can remove the sediment like this.
03:06 You can add in your condensed milk and your evaporated milk.
03:12 So it also depends on how sweet you want your drink to be.
03:15 It's very sweet but you can add water or in this case, I will use milk so that our drink
03:23 is richer.
03:25 Let's also season it with vanilla extract as the finishing touch and let's give it a
03:30 taste and see what it needs.

04:03 So first, in a glass, we add our ice.
04:08 Now we top off our ice with our horchata milk.
04:11 Of course, to make it a bit more artistic, let's add some whipped cream.

05:10 Now that we've made our very delicious Christmas horchata, let's now proceed with making our
05:16 equally as delicious appetizer, chicken liver pate.

05:26 We're always looking for yung mga malilit na pika-pika.
05:30 Using these very affordable ingredients, we can make a big batch.
05:34 Perfect talaga 'to for your Noche Buena handaan.
05:37 So let's get cooking.
05:38 The first step na gagawin natin is lilinisin natin yung liver.
05:43 Ang gagawin natin, ibiblend natin yung liver natin, and gusto natin maging silky smooth
05:48 siya.
05:49 So kailangan tanggalin muna natin yung mga malilit na puso na 'to.
05:54 So as you can see, nakaseparate na yung mga chicken hearts natin, and natanggal na natin
05:59 yung mga connective tissue ng liver.
06:01 Into a hot pan, isisear na ngayon natin ang ating liver.
06:05 Painitin lang natin.
06:08 What you want to do is give this liver around 2-3 minutes per side, or until cooked through.
06:14 Tsaka medyo, may kita nyong magkakakrust ng konti yung liver natin.
06:23 You'll know when the liver is ready.
06:25 Medyo nag-firm up na siya, medyo brown na rin yung magkabilaang parte ng liver.
06:31 Set aside natin yung naluto natin yung chicken liver, and in the same pan, isa-sauté natin
06:36 ngayon yung ating mga onions and garlic.
06:39 Ito yung ibang aromatics natin dito.
06:42 You can totally opt the capers out kung hindi kayo mahilig dito, or wala kayong capers sa
06:48 bahay.
06:49 So next, we'll be adding back our chicken liver.
06:53 Season lang natin with salt and pepper.
06:55 You can adjust this later on kapag nasa blender na siya.
06:58 And then, maraming black pepper.
07:01 Pwede natin lagyan ng konting rosemary.
07:05 Tapos na 'to yung liver natin.
07:07 So now, let's move on to the blender.
07:10 Directly habang medyo mainit pa siya, i-lipat na natin sa blender.
07:16 That smells so good.
07:19 Habang biniblend siya, mag-iincorporate tayo ng malamig na butter.
07:24 So ang gagawin nito is may culinary term na, tinatawag na yung emulsification.
07:30 So mas magiging smooth siya.

07:53 But before we chill it, para mag-settle siya.

08:04 meron din tayong layer of butter dito sa taas.
08:07 Naglagay tayo dito ng rosemary.
08:09 Pwede rin tayo maglagay ng konting-konting thyme.
08:13 Mas prefer ko gumamit ang saunted butter para kontrolado mo talaga yung pagkaalat ng dish mo.
08:19 Pwede na tayo maglagay ng konting-konting asin.
08:22 Pwede na natin patayin iyan.
08:24 I-top lang natin yung butter.
08:27 Ayan.
08:28 There we go.
08:30 We will chill this for around 30 minutes or until mag-set yung butter natin.
08:36 In the meantime, we'll be preparing yung bread slices natin that we'll serve with our patay.

08:46 Basically, yung ginawa ko is kumuha ko ng mumurahing baguet.
08:50 So toast lang natin 'to until golden brown on each side.

09:00 Okay. So our patay has nicely chilled.
09:03 As you can see here, ano na siya, nag-harden na yung butter sa taas.
09:08 And I'm sure sa loob din nag-set yung patay natin.
09:12 So very spreadable na siya ngayon.
09:14 You can actually use any form of cracker, bread, would pair nicely with this dish.
09:21 So ayan, plate na natin.
09:23 And there you go guys. Chicken Liver Patay.
