00:00 Yeah, well look, we're obviously very chuffed to win the award.
00:05 Recognition in hospitality is not overly prominent and any awards that we receive in regards
00:13 to the job that we're doing is just fantastic.
00:15 Well, we're really privileged to have our head chef, Raghi.
00:20 We basically give him a free reign of everything in the kitchen to really spread his wings
00:27 and try any sort of dishes that he likes.
00:32 We're 100% to give anything a go.
00:35 And throughout the whole COVID period, it's been a really tough period for all hospitality
00:38 venues.
00:40 Obviously staff's been an issue.
00:41 COVID, for some reason, has got rid of all the chefs.
00:45 And look, the work that our chefs have done over the past three years has just been absolutely
00:51 enormous.
00:52 And a lot of people that come into your venue sort of don't realise the work that goes on
00:56 behind the scenes.
00:57 It's a mountain of work that they do do.
01:00 And for us to put everything on the plate when people do walk through the doors is a
01:04 huge credit to them and the staff that we've got here working.
01:08 Yeah, we've grown up in the pub industry.
01:11 I was five when we first got into the Newmarket Hotel, actually.
01:17 And that was mum and dad's first venture into the hotel industry.
01:22 And that was in 1980.
01:24 So we've been in and out of different pubs for the last 45 years, I guess.
01:32 And yeah, we've really loved it.
01:35 And we're generational kids going into the industry as well, I guess.
