What You Should Be Doing Instead of Marinating Your Meat

Publican Quality Meats's Joe Frietze has a bone to pick with the way you're prepping meat. If you're grilling this summer,you may be mixing upa few marinades. But marinades require advance planning, and, according to Frietze, they're not actually all that great. If you are just dying touse a marinade, Frietzerecommends dunking. First, thin out your marinadeto the consistency of soy sauce,and keep it close at hand. Every few minutes, take the meat off the grill, dip it in the marinade, and put it back on the grill. When the meat is cooked,let it rest in the marinade. This is a really simple changethat will save you tons of time!
