CONIGLIO RIPIENO
INGREDIENTS:
(Doses for 4 people)
1 kg rabbit, salt, pepper, chopped thyme, oregano, garlic, 100 g of pork in salt
200 g wild fennel, oil, tomatoes
PREPARATION:
Clean, wash and dry a rabbit
Salt, pepper and fill with a chopped mixture obtained with a teaspoon of thyme and oregano
Add a clove of garlic, salted pork and wild fennel
Sew up and tie the rabbit and bake it in a hot oven sprinkled with oil
Serve it warm on a bed of tomatoes sliced and dressed with the cooking dough
