CONIGLIO DISOSSATO RIPIENO

INGREDIENTS:
(Doses for 4 people)

1 kg rabbit, chopped olives, pine nuts, salt, pepper, butter, white wine, bacon (optional)

PREPARATION:

With a knife bone the rabbit until you get a single large slice of meat
Sprinkle with chopped olives, pine nuts, salt and pepper
Roll the whole and "bind rolled" and brown in the butter for 10 minutes in a pot
Bathe with white wine and bake at 180 degrees for 30 minutes turning often
Serve sliced by soaking in the cooking medium.
A variant also includes some slices of bacon in the filling
The dish is ready, enjoy your meal!
