BRASATO DEI GONZAGA
INGREDIENTS:
(Doses for 4 people)
900 g beef, 50 g butter, one large onion or a shallot, 2 cloves
cinnamon powder, half a glass of dry white wine, cream, salt, pepper
PREPARATION:
Put the meat, butter, onion and shallot into a pot
Add cloves and cinnamon
Sauté over high heat, then wet with a drizzle of broth and cook covered for an hour
Soak with wine, sprinkling with pepper
Evaporate the wine, add cream, salt and finish cooking over very low heat
Pass the cooking mixture through a sieve and pour over the sliced meat
Accompany with mashed potatoes
