AGNELLO AGLI CHAMPIGNONS
INGREDIENTS:
(Doses for 4 people)
2 lamb fillets, 300 g champignons, 60 g butter, flour, a clove of garlic
parsley, a glass of white wine, marsala, pepper, salt
PREPARATION:
Peel the mushrooms and cut them into slices
Sauté them quickly in a frying pan with half the butter and chopped garlic
When they are well browned, pour half a glass of white wine and let evaporate
Salt and pepper, bring to cooking over ended
Put the remaining butter in another pan, keeping aside a teaspoon
Make it colour, add and make to golden the lamb medallions from sliced and floured
When they are golden on both sides, salt, pepper and wet with wine and let evaporate
Remove the lamb from the pan and add the remaining butter worked with a tablespoon of flour
Tie the sauce, then put it back together with the champignons
Soak with 3 tablespoons of marsala, let flavor for a few minutes
