Does the Arctic surf clam ring a bell? Not many Canadians are familiar with this variety of clam. But in fact, the world’s biggest Arctic surf clam fishery is based in Bedford, Nova Scotia. Ricardo tours the Clearwater processing plant and meets chef Stefan Czapalay. Together, they cook a dish featuring this delicious mollusc, which after being harvested on the high seas of Canada is mostly exported to Japan.
