The hidden world of a potato, viewed at 1000 - 1500x magnification through a phase contrast microscope. Most of what you see are starch granules. Plants use starch granules to store energy. They are produced by a wide variety of plants and are a mixture of amylose and amylopectin (polysaccharides). The size and shape of the starch grains are useful for the identification of the different plants. You also see a plant tissue cell with a visible nucleus! The nucleus contains the DNA instructions for the plant.
