Learn how to prepare Ennai Kathirikai Kulambu, Brinjal gravy recipe exclusively on Gowri Samayalarai. This goes well with rice & roti.\r

Ingredients :\r
Brinjal - 1/4 kg\r
Small onion - 15 ; Tomato - 1 ; Garlic - 10 cloves;\r
Gingelly oil, Mustard seeds, Urad & Gram dal, Asafoetida,\r
Tamarind pulp, Salt, Jaggery,\r
Turmeric powder, Kulambu powder - 3 spoons, \r
Corriander powder - 2 spoons, Coconut - 3 spoons, Cumin seeds, Curry & coriander leaves.\r

Steps:\r
1. Cut brinjal as shown. In gingerly oil, fry mustard seeds, urad & gram dhal, asafoetida.\r
2. Add onion, garlic cloves ,tomato, brinjal & fry for 2 mins.\r
3. Add all the powders & tamarind pulp, salt. Let this boil in closed lid until the brinjal is cooked.\r
4. Grind coconut, cumin seeds, garlic,curry,coriander leaves & add it to the kulambu and Add curry leaves & boil for 4 minutes.\r
5. Add coriander leaves, jaggery. Switch the flame off & add little gingelly oil / Sesame oil for additional flavour.\r
