Add potatoes, thyme and a little more water, and cook, stirring occasionally, for a few minutes. Add broccoli, cauliflower and stock. Cover and bring to a boil. Cook until veggies are soft, stirring occasionally - especially if the stock doesnt all the veggies.\r \r Once veggies (specifically the potato) are soft, blend with an immersion blender, or add half to a blender and blend, add to a bowl and blend the other half.
