Though celebrated as a health food, the AHA says there are no good studies to support that. In fact, coconut oil is packed with saturated fat and can raise “bad” cholesterol. While 82% of the fat in coconut oil is saturated, butter has only 63% saturated fat and beef has only 50%. In other words, you may be better off cooking your pancakes in beef fat.
