Lemon Rice is one of the most popular and often made dish in South India. Lemon rice is also served with Raita, Pappad or Pickles. It is a great travel food and is a healthy lunch box recipe.
Ingredients
Vegetable Oil Tsp og Mustard seeds 1/2 pinch of chopped Ginger Asafoetida 10 to 12 chopped Cashews / Channa dal/ Udit dal ( Optional) Red Chillies Tsp of Turmeric Salt to Taste Curry leaves Bowl of Cooked Rice 2 Lemon Juice
Method
- Heat a pan, add Vegetable Oil, once the oil is hot add tsp of Mustard seeds and let it crackle. To this add half a pinch of chopped Ginger, Asafoetida, 10 to 12 roughly chopped Cashews or Channa dal or Udit Dal. - Add some red Chillies, Turmeric, Salt to taste, Curry leaves and switch off the gas. - Add a bowl of cooked Rice and mix it well. - Add 2 Lemon Juice and mix it.
