The popularity of the gluten-free diet has grown recent years despite the fact that the number of celiac diagnoses has remained steady. About 1 in 41 people have celiac disease, an autoimmune disorder that causes inflammation after consuming gluten, which is commonly found in wheat, barley and rye. Researchers speculate that it may be a public perception gluten free diets are healthier that's contributing to the increased popularity.The Diet is said to contribute to weight loss and other reduced symptoms of inflammation and gastrointestinal distress. Dr. Daphne Miller of the University of California San Francisco says that clinicians shouldnt dismiss these beliefs, noting that it gives medical practitioners the, quote, "opportunity to understand how factors associated with this diet affect a variety of symptoms...including overall wellbeing"
