Ingredients:
7 Tomatoes For Stuffing 4-5 Potatoes, Boiled & Mashed Coriander Leaves 1/2 tsp Coriander Seeds Powder 1 tsp Mix Masala 1 tsp Kolhapuri Masala Salt to taste 2 tbsp Oil
For Gravy 2 tbsp Oil Coriander Leaves Paste of 2 Onions, Scooped Tomatoes, 7-8 Garlic, 1/2 inch Ginger 1 tbsp Mix Masala 1 tbsp Kolhapuri Masala 1 tbsp Coriander Seeds Powder Salt to taste Water
Method:
- First chop both the ends of the tomatoes. Scoop out the inside mixture from the tomatoes. Similarly keep doing this for all the tomatoes. - To make the stuffing in a bowl add boiled & mashed potatoes. - Then add coriander leaves, mix masala, kolhapuri masala, coriander seeds powder and salt. Mix everything well. - Stuff this potato mixture in all the tomatoes. - In a pan heat some oil. Place the stuffed tomatoes on the oil. - Cover it and let the tomatoes cook for 10 minutes. - To make the gravy, heat some oil in a pan. - Add coriander leaves. - Then add onion-tomato-ginger garlic paste. Saute this paste for a minute. - Add mix masala, kolhapuri masala, salt & coriander seeds powder. Mix well. - Add little water and mix well. Cover it with a lid and let the gravy cook for 10 minutes. - Pour this gravy on the cook tomatoes. - Cover it again and let everything simmer for sometime. - Garnish it with coriander leaves. - Stuffed tomato potato sabzi is ready to be served.
