Amanda Cerny Makes A Raw Vegan Carrot Cake

Showing you all how to make the BEST raw vegan carrot cake! I played with the recipe a bit to perfect it. This cake is so easy and so delicious to make. Best served cold out of the freezer. MMMMMM I want some more now that I keep talking about it. Enjoy! And big thanks to Curtis Lepore for assisting me make my carrot cake.

RAW vegan carrot cake! Ingredients:
~4large shredded carrots
-1 cup raw walnuts
~1 cup of golden raw raisins (to place in between cake layers so delicious! )
~1.5 cups of pitted dates
~Ginger spice or a pinky of fresh ginger
~1 tsp Cinnamon
-3/4 tsp nutmeg
-1/2 cup shredded unsweetened coconut
~Slice of vanilla bean/ 1-2tsp vanilla extract

Vanilla Icing Frosting!
~2 cups of soaked raw cashews soaked overnight - drain and rinse in clem water (soaked at least 4 hours)
~2 cups of raw young coconut water
~1.5 cups of pitted dates
~1tbsp of raw fresh, squeezed lemon juice
~Sprinkle of cinnamon
~Pinch of vanilla bean or vanilla extract (1-2 tsp)
pinch of sea salt
-zest of 1/2 an orange


(optional) toppings

Edible flowers
crushed pistacios
shredded coconut
walnuts
zested orange
sprinkled cinnamon
