To most of us, jellyfish are those slimy things that justify peeing on another person. But in parts of the world, jellies are tasty, tasty treats and make for yummy soup, salad and snacks! About a dozen species of jellyfish are edible, and people have been chewing on them for a long time. Emphasis on the chewing.

Jellyfish require some pretty intensive processing to get to the form you can pick up in your neighborhood Asian market. And while jellyfish noms are labor-intensive, they’re great diet food: pretty much all water and lean protein. Like a salad, but fishy! A fishy salad with a deep history of use in Chinese Medicine! Frankly, what more could you ask for?
