Food blogger Tarika Singh brings you the easy, hassle-free and extremely delicious one pot pasta recipe. This delectable one pot spaghetti calls for a variety of flavourful ingredients that blend beautifully and the best part being, this customizable meal is cooked entirely in one pot, thus saves on the washing up.

Ingredients:

125 gms spaghetti
1 to 2 cloves garlic, minced
1 small sized tomato or 1/2 medium tomato, chopped
1 sprig of basil
1/2 tbsp dried chives or 1 tbsp if using fresh
1 tsp of dried oregano
pinch of red chilli flakes (add more if you’d like it spicy)
1/2 cube of low sodium vegetable stock
2 cups of filtered water
100 gms mushrooms, sliced
salt and pepper to taste

Garnish:
Few sprigs of arugula
Grated Parmesan cheese

Method:

- Boil water in a pot and add the spaghetti.
- Add the vegetable stock cube, chopped tomato, garlic and chopped basil leaves and let it cook. As it is cooking, push the spaghetti down.
- Add oregano, chives and the chopped mushrooms to the water.
- Add salt to taste and keep stirring from time to time.
- Add the chili flakes (optional).
- Let the pasta cook and absorb the water until very little water remains in the pot. At this stage, turn off the flame.
- Serve the pasta in a nice bowl and garnish with few arugula leaves and grated parmesan cheese.
