Katlama is a very popular peshawari roti. The 7 layers of this paratha is coated with ghee and ajwain (carom seeds) and rolled into flaky goodness and then simply deep fried into very crisp rotis.

Ingredients

Maida dough (refined flour dough), kneaded in plain water with some salt
Wheat flour for dusting
Ghee (clarified butter)
Ajwain (carom seeds)
