Ideal for a lazy monsoon afternoon, this recipe of fried brinjals can be prepared in no time. Have it with a hot cup of tea or with rice and dal during lunch or dinner.

Brinjals, cut into roundels
Rice Flour
Coriander, Chopped
Oil For Frying
Garlic Ginger Paste
1 Tsp Coriander Powder
1 Tsp Cumin Powder
1 Tsp Salt
1 Tsp Red Chilli Powder

Procedure:
1. Add oil in a pan
2. Prick brinjals with a knife
3. Smear with ginger garlic paste
4. Add salt and chilli powder
5. Add coriander & cumin powder
6. Add coriander leaves
7. Roll in rice flour
8. Cook on both sides

Tip: Add lemon juice or dry mango powder to the brinjals
