TIL PEANUT SOFT CHIKKI

While I’ve shown the regular til chikki / til papad before, I realized that not everyone can enjoy it—especially those who have dental issues. So this soft chikki is a great alternative. It’s almost as soft as Sukhdi, but still gives you the chikki experience. Happy Sankranti!

Ingredients:
1 cup Raw Peanuts
1 cup White Sesame Seeds
1 tbsp Ghee
1 cup Jaggery
1/2 tsp Cardamom Powder (optional)
Chopped Pistachios (optional)

Method:
Heat a pan and dry roast 1 cup raw peanuts until they turn light golden-brown.
Let them cool and remove the skins.
Next, dry roast the white sesame seeds and transfer them to a bowl.
Coarsely crush the roasted peanuts and set aside.
Then coarsely crush the roasted sesame seeds and set aside.
Heat 1 tbsp ghee in a pan.
Add 1 cup jaggery.
Add a spoonful of water and keep stirring.
Cook on low to medium heat until the jaggery melts.
Once it starts bubbling, add 1/2 tsp cardamom powder and mix.
Add the crushed peanuts and sesame seeds.
Mix well and turn off the heat.
Transfer the mixture to a plate.
Flatten it with a spoon.
Sprinkle some chopped pistachios on top.
Cut into squares while it’s still warm.
Let it rest for 2 hours.
Enjoy this Sankranti Special Delicious Til Peanut Soft Chikki.
