Mango Kadhi - Fajita - Vegetarian Recipe by Annuradha Toshniwal [HD] INGREDIENTS- 2 pairi mangoes (any sour variety, if unavailable) 1 alphonso mango (any sweet variety, if unavailable) 3 cups water 2 tbsp. yogurt 3 tbsp. chickpea flour (besan) 2 tbsp. ginger chilli paste salt to taste sugar to taste pinch of asafoetida
Tempering- 2 tbsp. oil 1/2 tbsp. mustard seeds 2 whole red chillies few curry leaves 2 green chillies split 1 tsp. red chilli powder 2 tsp. coriander powder
METHOD- - Gently roll the mangoes to loosen the pulp - Cut and remove the pulp in a bowl - Take 3 cups of water in a bowl. Add the seeds of the mango and rub to remove the pulp from the seed. - Add yogurt, chickpea flour & ginger chilli paste. - Mix well. Keep aside. - Heat oil. Add asafoetida, mustard seeds. - When they splutter, add curry leaves, whole red chillies. - Immediately add the mango mixture and stir till it boils. - Add salt and sugar to taste. - Serve hot with boiled rice.
NOTE - The remaining mango pulp can be used for Aamras, Mango Milkshake etc.
