Niratama is the kind of quick Japanese egg stir-fry that can turn a plain bowl of rice into something special in just 5 minutes. Fluffy scrambled eggs are seasoned with oyster sauce, chicken bouillon, salt, sugar, and black pepper, then combined with fragrant garlic chives for a simple but satisfying side dish.

The recipe starts with whisked eggs, then moves to a hot wok where the chives are stir-fried briefly to bring out their flavor. After that, the eggs are cooked just until soft and fluffy, with the key tip being to remove them from the heat before they are fully set so the residual heat finishes the job. A final drizzle of sesame oil and an optional sprinkle of shichimi togarashi add extra aroma and gentle heat.

This easy Japanese home cooking recipe works as a rice topping, a quick weeknight side, or a fast egg dish when you want something comforting without much prep. It’s a beginner-friendly garlic chives recipe, a simple egg stir-fry, and a practical 5-minute meal idea for busy days.

00:00Hi, Mewtwo, and today on Sudatsuya, I'm going to show you how to make a 5-minute egg dish
00:05called niratama.
00:08Start by cracking 3 eggs into a bowl and giving them a quick whisk to break up the yolks.
00:24Next we're going to flavour them with ½ teaspoon of oyster sauce, ¼ teaspoon of
00:29chicken bouillon powder, ¼ teaspoon of salt, ½ teaspoon of sugar, and a pinch of ground
00:35black pepper. Whisk one small and then set the bowl by the
00:39stove for later.
00:44Next heat up a wok on high and add 1 tablespoon of cooking oil. Once it gets hot, add 50
00:50grams
00:51of garlic chives, I'll just cut them with kitchen scissors to save time.
01:00Stir fry them for 30 seconds to help them release their flavour.
01:04In Japanese, the garlic chives are called niratama, an extra tamago, which is how the dish gets
01:10the name.
01:10After 30 seconds are up, transfer them to a bowl of eggs and return the wok to the heat.
01:21Add another tablespoon of oil and give the eggs another mix before pouring them into the wok.
01:29Scramble them to your preferred doneness.
01:33The tip to perfectly fluffy scrambled eggs is to take them off the heat before they're
01:38completely cooked, as they will continue to cook in the residual heat.
01:43Okay, this looks good, so let's take it off the heat and serve.
01:47Finish the dish with a drizzle of sesame oil and a sprinkle of Japanese chili pepper called
01:51shichimi togarashi. You can serve this on its own as a side, or even as a rice topping
01:56for donburi.
01:57And great news, I've launched a free mobile app that makes following along with my recipes
