00:00Hi everyone, today on Statue I'm going to show you how to make delicious chicken katsu in the oven.
00:05No frying required.
00:07Before we start, I'm going to prepare my oven to 220 degrees Celsius or 428 Fahrenheit.
00:15So first, take about 300 to 450 grams of chicken breast, remove the skin if it's still on,
00:25and cut it into slices.
00:29Cutting the pieces thin like this reduces cooking time, meaning it's less likely to dry out in places.
00:42Next, we're going to stab each piece with a fork.
00:45This again helps tenderise the meat, so it's going to be nice and soft after we cook it.
00:51Now I'll sprinkle it with a pinch of some pepper.
00:57And transfer it to a bowl.
01:01Add about 1 tbsp of flour.
01:06And mix it around until all the slices are evenly coated.
01:15After it's all covered, add 2 tbsp of mayonnaise, and again, mix it around until all the pieces are covered.
01:23Mayonnaise contains vinegar and eggs, both of which help break down proteins and fats tend to raise the chicken even
01:29further.
01:29But that's not my only reason for coating it in mayonnaise.
01:33It's also going to help the panko breadcrumbs stick.
01:37Once it's all covered, set aside.
01:39Next, grab a dry pan and add your panko breadcrumbs.
01:42We're just going to cook them over medium-low heat until they turn golden brown.
01:48You might think this step seems pointless because they're going to be cooked in the oven, but I actually find
01:53they don't colour much in the oven, mainly because this recipe doesn't use oil.
01:58Make sure to mix the panko continuously to prevent any burning.
02:02It takes a few minutes to start changing, but as soon as they start to brown, they'll suddenly darken very
02:07quickly, so lift the pan off the heat to prevent burning.
02:11Once the panko looks like this, transfer it to a plate or container and let it cool for a few
02:16minutes.
02:21Next, take your chicken slices, coat them generously in the panko breadcrumbs and place them on a wire rack that
02:27fits your oven tray.
02:29Using a wire rack stops burning and helps them cook evenly.
02:33I'm sure this recipe would work great in an air-fry too.

02:40Now that they're all covered, place them in the oven on the bottom shelf and bake for 10 minutes.
02:46After 10 minutes, flip them all over and bake for another 15 minutes, so 25 minutes of baking time in
02:53total.
03:08While we wait for these, I'm going to show you how to make a sauce.
03:11Grab a small bowl and add 2 tablespoons of ground sesame seeds,
03:152 teaspoons of soy sauce,
03:182 teaspoons of washed soy sauce,
03:201 tablespoon of tomato ketchup,
03:221 teaspoon of sugar,
03:24and 4 teaspoons of water.
03:27Whisk it all together until combined and that's it.
03:35Ok, so the katsu have finished baking, so let's take him out of the oven.
03:44Serve it with the sauce for drizzling or dipping and that's it.
03:48Delicious oven baked chicken katsu that you can serve however you like.
