00:00Hey everyone, I'm Yuto and today on Stachi I'm going to show you how to make delicious
00:04Teriyaki Tofu Donburi with all plant-based ingredients. Let's get started.
00:09First we're going to wrap 350 grams of firm tofu with kitchen paper and microwave it for
00:152 minutes at 600 W to evaporate some excess moisture. While we wait for the tofu to cool
00:21down, let's prepare our Teriyaki sauce. Grab a small bowl and add 2 tablespoons of soy sauce,
00:272 tablespoons of mirin, 2 tablespoons of sake, 2 teaspoons of sugar,
00:34and half a tablespoon of garlic paste or grated garlic. Mix it until the garlic is evenly distributed
00:42and then set aside for later. Next, heat a pan on medium and add drizzle of oil.
00:48Add 50 grams of bell pepper and 50 grams of sliced Japanese leeks or just regular leeks.
00:55You can also add your favourite vegetables here. Keep an eye on them and fry them until they're
01:01slightly charred but while we wait, let's prepare our tofu. Here it is after microwaving. As you can
01:08see, it's dried out a bit. I'm just going to cut it into 12 cubes. I recommend cutting large cubes
01:15so
01:15that it has a bigger surface area. Next, prepare a container with 3 tablespoons of potato starch,
01:23a pinch of some pepper and give it a mix. We'll be using this to cook our tofu.
01:30Okay, let's check the vegetables. These are looking nice and charred so for now,
01:35I'm just going to transfer them to a plate. Add a generous amount of oil to the same pan and
01:42then,
01:42when it's nice and hot, coat each piece of tofu in the starch and place it in the pan. It's
01:48important
01:49that you put the tofu straight in the oil once it's coated, otherwise the starch can become wet
01:54and gummy. That's why I don't coat it in advance. As the tofu cooks, turn it occasionally to get an
02:01even colour on all sides. The starch not only makes the outside lightly crispy and nicely coloured but
02:08it's also going to help the sauce stick better later. Once they're lightly golden all over, I'm gonna
02:15add the sauce we prepared earlier. Keep turning the tofu so that it gets coated all over and then add
02:22the
02:22vegetables back in. Continue to cook until the sauce becomes thick and glossy and everything is evenly
02:30coated. When it looks like this, you can take off the heat. Finally, dish up over freshly cooked rice
02:38and sprinkle with chopped green onions and sesame seeds. I also like to add a drizzle of chilli oil for
02:45a spicy kick.
02:46And that's it, delicious Terreg Tofu Donburi. I'm not vegan myself but I seriously love this dish.
