00:13teriyaki salmon. It's so tasty and easy to make. It only takes like 10 minutes.
00:21For two portions you will need two salmon fillets, preferably whisking on a pinch of
00:26salt and pepper, one tablespoon of potato starch or corn starch, one and a half tablespoons of soy
00:34sauce, mirin and sake, one teaspoon of sugar and one tablespoon of neutral oil like vegetable oil
00:41or quinoa oil. So first we're going to prepare the salmon. Start by drying it with a paper towel to
00:50remove excess moisture. Then sprinkle it with salt and pepper. After that, coat it in the starch.
00:57If you watched my teriyaki cot video, you might have seen that I wash the cot in boiling water
01:03first. This is to improve the taste rather than actually wash it. So we don't need to do that
01:09first step with salmon. Salmon already tastes good.
01:31I coat the fillets with cornstarch so that when it cooks it gets a little bit crispy on the skin
01:38and
01:38also it's going to help the teriyaki sauce stick to the surface. Once you're done with that,
01:45we can make the sauce. Take a small bowl and add your soy sauce, mirin, sake and sugar.
02:00Give it a little mix and then we're ready to cook. So easy.
02:09Take a pan, heat it on medium and add a tablespoon of oil.
02:21Once it's hot, place your salmon fillet in with the skin facing down. We're going to let
02:27them crisp up for about 4 minutes.
02:32Did you know teriyaki is not the sauce itself but a method of cooking in Japanese?
02:38The word teri means shiny or glossy and yaki means to fry or cook.
02:44The sugar in the sauce makes it shiny like caramel so it makes sense.
02:50Okay, 4 minutes are up. Carefully flip the salmon over and cook it for 2 minutes on the other side.
03:18After 2 minutes, you can add your teriyaki sauce you made earlier.
03:22We're just going to continue to fry that until it gets thick and glossy.
03:28Teriyaki sauce is kinda sweet, savoury and packed with umami.
03:32It goes with pretty much anything, but I think it goes with fish and chicken the best.
03:39It's hard to believe that it's so easy and only made with 4 ingredients,
03:44but I've gotta say soy sauce, mirin, sugar and sake, they're all important in this dish.
03:51In fact, they're important for Japanese cooking in general,
03:54so I don't recommend making substitutions if you can help it.
03:59Also, if you have these ingredients,
04:02you can make so many different recipes with authentic Japanese flavour.
04:21Ok, I'm just spooning the last of the sauce over the top of the salmon and it's done.
04:27Time to the shop.
04:30I like eating teriyaki salmon with rice and miso soup,
04:33but you can also have it with salad or something too.
04:38Sprinkle with spring onion for some extra colour and that's it.
