00:12Hey guys, it's Yuto from sudachirecipes.com and today I'm going to show you how to make
00:18a zesty twist on Japanese yakisoba. These fried noodles are flavoured with a refreshing
00:24lemon sauce and stir-fried with prawns and vegetables. This recipe serves two and is
00:31the perfect dish for summer or light lunch. So before we start, I'm just gonna soak 100
00:39grams of bean sprouts in a bowl of water with a few pinches of salt. This is just to clean
00:46them and stop them burning when we cook them later.
01:03Next we'll prepare the sauce. Take a small bowl and add half teaspoon of salt, a pinch of black
01:10pepper, quarter teaspoon of sugar, dash soy sauce, one tablespoon of sake, half teaspoon
01:17of garlic paste, one teaspoon of white sesame seeds, zest of half a lemon, juice of half
01:24a lemon, one teaspoon of chicken stock powder, one teaspoon of sesame oil, and one tablespoon
01:32of finely chopped spring onion. Mix it well and set aside for later.
01:49So take a large frying pan or wok and heat it on medium-high. Once it's hot, drizzle a teaspoon
01:56of sesame oil and add your noodles. We're cooking noodles first because we want them
02:02to get a little bit crispy and this takes longer than cooking the other ingredients.
02:07We do this so the noodles don't get mushy and stuck together at the end.
02:24Once it's browned slightly, flip them over and cook the other side.
02:53Yaku sobe is usually made with this Chinese style wheat noodles. I like using the Chinese
02:59chilled ones because you can just throw them straight in, but dry also works for this recipe. You've
03:05just got to pre-boil them first and they'll take longer to crisp up when you fry them.
03:13Okay, these look good. I'm just going to transfer them to a plate while I cook the other ingredients.
03:28So in the same pan, add another teaspoon of sesame oil. I'm going to cook the prawns and asparagus next.
03:36My prawns have already been deshelled, deveined and cleaned, but if you want to learn how to do this, I've

03:52I have also cut the asparagus into bite-sized pieces. We're just going to fry these together until the prawns
04:00are cooked through, which should only take a few minutes.
04:04And add a pinch of salt and pepper. Usually yaku soba is made with thinly sliced pork, but the lemon
04:12sauce goes very nicely with seafood. So other than prawns, you could also use scallops, octopus or squid.
04:23Okay, so these are cooked. I'll add the noodles back in and just separate them a bit like this.
04:36So now we're going to push the noodles to one side and add the bean sprouts so they're touching the
04:42base of the pan.
04:49Then add a layer of cabbage on top.
05:00Finally, move the noodles, prawns and asparagus to the top.
05:04By making these layers, the cabbage is going to steam with the water from the bean sprouts and the noodles
05:12are going to create kind of barrier to stop the steam escaping.
05:22After about two minutes, turn up the heat to high and add the sauce we made earlier.
05:27Stir fry for one more minute and it's ready to serve.
05:52Transfer to a plate, garnish with some spring onion and lemon slices.
